The Golden Spurtle
With World Porridge Day fast approaching, Remedy Kitchen felt it was only right to celebrate the humble Spurtle!
This traditional Scottish kitchen utensil, with its distinctive rod-like shape, was designed for stirring porridge and is still very much part of Scottish porridge making tradition today. In fact, competitors at the annual World Porridge Making Champs World Porridge Making Championship bring along their own favourite spurtle to battle it out for the title.
And this year there’s an Australian connection…
Back in August, Australia stirred up some serious porridge talent at the inaugural Pearly Spurtle Festival of Porridge, held in the coastal village of Pearl Beach on the NSW Central Coast.
The sold-out event attracted 15 competitors who battled it out in Traditional and Creative Porridge categories, with Sydney dad Bobo's Porridge Kitchen taking out the overall Pearly Spurtle Championship.
And the prize? A trip to Scotland to represent Australia at the Golden Spurtle!
Today, Saturday 3 October, Robert will be putting his porridge making skills to the test at the 33rd Golden Spurtle World Porridge Making Championship in Carrbridge, Scotland.
So while we might be a little too far away to cheer him on in person, we’ll certainly be stirring up some support from Australia!

Couscous Salad the Remedy Way
I’m so excited that salads are no longer a dirty word. In fact, salads have truly evolved over time. No longer just a side dish or the greenery you eat because you knew it was good for you, they’re now taking centre stage and finally getting the spotlight they deserve.
Remedy Kitchen hopes this dish becomes a repeat offender in your house!
Fluffy couscous, toasted pine nuts, currants, fresh herbs, golden halloumi coated in Superb Seasoning Mix, creamy goat cheese and a zesty orange dressing. What’s not to love?
And in our house, couscous is affectionately known as Kiss Kiss!
COUSCOUS
3 cups vegetable stock
1½ cups couscous
½ cup pine nuts, toasted
¼ cup currants
2 tbsp parsley, chopped
2 tbsp mint, chopped
½ tsp cumin
½ tsp coriander
½ tsp salt
¼ tsp black pepper
HALLOUMI
2 x 180g halloumi
⅓ cup Superb Seasoning Mix
3 tbsp EVOO, plus extra for cooking
TOPPINGS
¼ Spanish onion, thinly sliced
2 tbsp goat cheese
DRESSING
2 tbsp EVOO
1 tbsp honey
Zest + juice of 1 orange
Salt + pepper
METHOD
Add couscous, spices, salt, pepper and currants to a wide serving dish.
Bring stock to the boil, pour over couscous, mix, cover and leave for 10 minutes, or until absorbed.
Coat halloumi with Superb Seasoning Mix and EVOO. Pan-fry over medium heat for 3–4 minutes each side, until golden.
Toast pine nuts. Slice onion and whisk together the dressing.
Fluff couscous with a fork, then add mint, parsley, pine nuts and onion. Top with golden halloumi and goat cheese, then drizzle with the orange dressing.

Date Night Oats
There’s something rather delicious about knowing your breakfast is waiting for you in the fridge when you wake up.
And when that breakfast happens to contain dates, raw cacao and Remedy Omega Porridge… well, I’m already looking forward to tomorrow morning!
We’ve all heard plenty about the benefits of raw cacao. It’s naturally rich in antioxidants and minerals such as magnesium, iron, copper, manganese and potassium. It’s also being explored for its role in heart health, mood, cognitive function and gut health.
I don’t know about you, but chocolate has always been one of my favourite guilty pleasures. The good news? Not all chocolate is created equal. When it comes to cacao, quality matters, so I’m more than happy to spend a little extra moola on the good stuff. Guilt, I think not!
For this recipe, I’ve used raw cacao from changinghabitsau . I love the philosophy behind this Australian wellness brand and the importance founder Cyndi O'Meara places on asking questions and understanding what we’re actually putting into our bodies.
A little ingredient insight, because sometimes it pays to know what’s behind the label.
Ingredients
The night before…
1 cup Remedy Omega Porridge
1 cup coconut yoghurt
1 cup almond milk
6 dates, pitted and chopped
2 tablespoons raw cacao
Mix well, then store in an airtight container in the fridge overnight.
The next day…
Time to layer up with a few of my personal staples.
1 cup granola, blitzed into a fine biscuit crumb
½ cup coconut yoghurt
½ cup fresh or frozen raspberries
Now let’s build a cup of delicious goodness!
The rules are… there are no rules. Build it however it tickles your fancy.
I added the granola crumb to the bottom of the glass, followed by the overnight oats, coconut yoghurt, a little more crumb and plenty of raspberries.
Chocolate for breakfast? Absolutely!

Zucchini Pancakes
Recently, while insposcrolling on social media, I came across one of those stop in your tracks, this looks delicious, I have to make this moments!
I’ve always had a great love for zucchini, and when I saw how Catherine Perez from Catherine Perez brought this dish together, I was eager to roll up my sleeves and get grating! I love that she uses silken tofu instead of eggs. Perfect for our vegan community!
It’s also a delicious way to incorporate Remedy Superb Seasoning Mix into everyday cooking. It adds a lovely savoury flavour to these crispy little pancakes without needing a long list of ingredients.
Ingredients: makes 2 large pancakes
2 medium zucchinis
450g silken tofu
1 teaspoon salt, plus extra for zucchini
1¼ cups wholemeal plain flour
¼ cup Remedy Superb Seasoning Mix
6 tablespoons cornflour
¼ cup sesame seeds, plus extra for sprinkling
1 teaspoon baking powder
1 small Spanish onion, thinly sliced
4 shallots, thinly sliced
1 inch piece of ginger, grated
1–3 tablespoons water
Ghee, EVOO or avocado oil, for cooking
Method
Grate the zucchini and sprinkle with a generous amount of salt. Allow to sit for 5–10 minutes, then wrap in a clean, dry tea towel and squeeze out as much liquid as possible. This helps create a crispier pancake.
Blitz the silken tofu and salt until silky smooth… pardon the pun!
In a large bowl, whisk together the flour, Remedy Superb Seasoning Mix, cornflour and baking powder. Pour in the tofu mixture and combine. The batter will be extremely thick, so gradually add the water, one tablespoon at a time, until thick but spreadable.
Add the zucchini, Spanish onion, shallots, ginger and sesame seeds. Mix well.
Heat a 22cm (8.5-inch) frying pan over medium-low heat and add a generous coating of ghee, EVOO or avocado oil. Add half the batter and spread evenly over the base of the pan.
Sprinkle with extra sesame seeds and drizzle with a little more oil. Cook for approximately 7 minutes, or until golden and crisp underneath. Carefully flip and cook for a further 5–7 minutes, or until golden brown and cooked through.
Cut into bite-sized pieces and serve with your favourite sauce.

Toppings: macadamias, passionfruit, granola, raw buckwheat and a drizzle of honey.
As we navigate the cooler months, I love giving my morning bowl a little extra goodness. Once the oats are cooked, stir through the sea buckthorn powder, freshly grated ginger and honey. Adding these at the end helps preserve their fresh flavour and minimises unnecessary heat exposure to their delicate nutrients and plant compounds.
A golden little bowl of goodness to start the day.
