What makes pickling artichokes different to regular artichokes? 🤔

👉 Baby artichokes are perfect for pickling! Despite being so much smaller than regular artichokes, they’re fully mature and just grow lower down the stalk, where they’re naturally shaded. This means they don’t develop the inner “choke” — making them ideal for pickling.

👉 Regular artichokes are the variety we are more commonly familiar with and are bigger and grown higher up the plant in more sunlight, developing a more prominent choke which needs to be removed before eating. They’re commonly steamed, boiled or baked, with the tender leaves and heart being the main edible parts.
