It’s crunchy, tangy, a little spicy, and comes together in just 10 minutes. The roasted chickpeas add the perfect crunch, and the dressing soaks into every slice of cucumber.

Viral Cucumber Salad

You’ll need:

* 2 large cucumbers, thinly sliced
* ½ red onion, thinly sliced
* ½ cup roasted chickpeas (or peanuts for extra crunch)
* 2 tbsp fresh cilantro, chopped
* 1 tbsp sesame seeds (optional)
* 2 tbsp olive oil
* 2 tbsp rice vinegar (or lemon juice)
* 1 tbsp soy sauce (or tamari)
* 1 tsp honey or maple syrup
* ½ tsp red chili flakes
* ½ tsp minced garlic
* Salt and black pepper to taste

How to make it:

1. Thinly slice the cucumbers and red onion.
2. Add them to a large bowl or jar with the roasted chickpeas, cilantro, and sesame seeds.
3. In a small bowl, whisk together olive oil, rice vinegar, soy sauce, honey, garlic, chili flakes, salt, and pepper.
4. Pour the dressing over the salad and toss until everything is evenly coated.
5. Let it chill for 10–15 minutes before serving so the flavors can soak in.
