What started as a bit of fun in my parents home kitchen eventually turned into full time jobs for my biz partner and I. We had a commercial kitchen space, a custom packaging range, branded delivery vehicles, managed staff & held pop up events in our local town. At the start of this year, I stepped back and reflected on everything we built ā and everything I learnt. Now, Iām putting that experience
You know when you put a batch in the oven and they start spreading uncontrollably and end up like flat puddles, because same šµāš«š ā¦.
A few reasons why this might happen:
šŖSilicone mats vs parchment - I tested silicone mats the other day, my cookies spread horribly on the bottom, all crunchy, crisp & unusual - the EXACT same batch that spread perfectly on parchment
šŖYou donāt use cold butter ā I always use mine straight from the fridge & chop it into cubes. Warm butter can melt quick and cause the dough to flatten when it bakes
šŖYou cream your butter and sugar together ā I never cream them for cookies. I just mix until little nuggets form, but I stop there! Creaming adds air, which makes them rise and then they can collapse flat
šŖYou arenāt mixing enough or are overdoing it ā I keep my mixer on a low speed and use the paddle attachment. Mixing too fast can warm up the butter and develop gluten, both make cookies spread more BUT, mix too little and you will have greasy, crumbly cookies
šŖYour recipe only uses baking soda ā this can make cookies spread more. I only use baking powder because it helps them puff up and hold their shape, so they stay nice and thick
šŖYou donāt bake from frozen ā Starting with cold dough means the butter takes longer to melt, so the cookies stay chunky instead of going flat in the oven. I always store my cookies in the freezer ready to bake
You donāt need cookie rings (or to add extra cornstarch) to bake imperfectly perfect round cookies. You just need a solid method & base recipe to work with š„¹

Cookies taste great, but there are also sooo many cons to having them on your menu as a baker. Thatās why I talk about them so much!
For ages I only baked and sold cupcakes & cakes, which definitely came with limitations
Since adding cookies to my menu Iāve never looked back and they quickly became one of my top sellers
To this day, I still get excited to eat my cookies and I love baking them. Because yes, having cookie dough stored in the freezer does mean I can bake one for myself if I really fancy it..
It took a lot of trial and error and cookie fails for me to finally be confident in baking them though.

I sell these cookies for nearly 4x what it costs me to make them which is a massive bonus!
Things that help me sell them consistently:
š¼ Use flavours people recognise but make them my own. Biscoff was and still is one of my best selling flavours. Like who doesnāt love Biscoff?! Itās a familiar favourite people know and love⦠You donāt need to overcomplicate it with fancy names that leave people questioning what the flavour actually is
š¼ Donāt just focus on how the top looks! Give a surprise on the inside. I donāt put too much on top of my cookies because thereās already so much deliciousness stuffed inside! You can use round ice cube trays to freeze your fillings so they fit perfectly inside the cookie
š¼Show different parts of the cookie in your content & marketing. I think cookies are quite hard to take pics of. Thatās why itās fun to show the bts of making them, break one open after baking, show the gooey inside and how indulgent it tastes! Reels and stories are good for this too
š¼ Use a recipe/method that I can actually count on without unpredictable results. I can capitalise on large or last-minute orders and give customers the option of mixed-flavour boxes (because nobody wants a box full of the same thing). It also makes experimenting with new flavours wayyyy easier and predictable too
š¼ Make them look consistent every single time. People buy with their eyes first, and nothing builds trust like a cookie that looks exactly like the one they saw in my photo. I weigh each dough ball so the bake is even, the shape is perfect, and every flavour looks identical in a mixed box. Consistency = repeat customers!
I always use the freezer for storage of the cookie dough, so only bake whatās needed or ordered. This means no wasted ingredients, time or money. Pre orders have helped me make my business profitable from very early on

I started baking from my parents kitchen at home, then it replaced my salary & I quit my job to bake full time!
I didnāt all of a sudden become a better baker
