𝘛𝘰𝘮𝘢𝘵𝘦𝘴 𝘧𝘢𝘳𝘤𝘪𝘦𝘴 is a dish that works best if the tomatoes are good, and early September is your last window before they disappear from the Paris market stalls.

Hollow out ripe tomatoes and stuff them with a simple mix of meat and herbs, bound with rice or breadcrumbs. Bake until the tops are golden and the tomatoes have softened.

Tomorrow the kitchens open again! We’ve had a restful August, and now we’ve checked the ovens, wiped down the counters, and made sure that everything's exactly where it should be for our classes tomorrow morning.

The school bells are ringing for the kids, and if you’re in Paris, you should learn something new too. Join us for a cooking or baking class and bring a new skill home with you. No exams to stress about at the end, just your creations to taste and the recipes to recreate it all at home.

Last month, one of our guests stood in front of the fish stall at rue de Poteau, squinting at a fish like it owed him money.

So his chef taught him the five-second test 🐟 :

Clear eyes, no fishy smell. Scales still tight to the body, with a shine. And the little tag clipped to it is a traceability label that tells you where and when the fish was caught.

Back in our kitchen, he got his hands on the fish the group chose, and with the rest of his classmates he learned exactly what market-to-table looks like.

Because that's the difference here. A restaurant in Paris hands you a menu someone else created, and it arrives at your table like magic. This class hands you a knife. 🔪

Our family macaron class in Paris pairs you and your child (ages 6-12) as a baking duo for 2.5 hours, working side by side to make two flavors of macarons from scratch. It's gluten-free, in a group small enough that everyone gets real hands-on time, not just a demo to watch.

Ask one of our chefs which butter they reach for, and the answer depends on what it's for.

For baking pastries, it's beurre doux, unsalted. Salt content in demi-sel shifts from batch to batch, and that's enough to throw off a precise dough.

Demi-sel is what you want on a crusty piece of bread. Simple, salted but should be good quality. Look for Bordier or Beillevaire, both available at cheese shops across Paris, La Grande Épicerie carries Bordier as well.

And piment d'Espelette butter is a treat. Once you've tried this mild French specialty you’ll want it on everything. 🌶️
