Guests explored how Suntory's protection of pristine water sources helps shape the exceptional taste and quality of our brands including The House of Suntory, Maker's Mark, Laphroaig and Bowmore—and how we help safeguard this shared resource for generations to come.

The two-month long Suntory House, held July 31st to October 3rd at Sakura House in Sydney, in is more than a place to enjoy a great highball or cocktail—it’s a space designed to bring Suntory’s craftsmanship, philosophy, and drinking culture to life.

Reimagined as a celebration of Tokyo’s after-work drinking culture, Suntory House takes inspiration from Japan’s nomikai tradition of gathering over drinks after work. The menu brings together Suntory’s portfolio of spirits, b**r, and ready-to-drink products, with a focus on highballs, sours, b**r on tap, and cocktails created by the Sakura House team.

Beyond what’s served at the bar, the space is also shaped by the ideas behind Suntory. One of the company’s most important beliefs is that great taste begins with precious water. For generations, water has been the foundation of Suntory’s craftsmanship, shaping the quality of its brands and inspiring a deep respect for nature.

That connection appears subtly throughout Suntory House, from water-inspired artwork and lighting to visual details woven into the space. Specially designed coasters also invite guests to discover more about Suntory’s efforts to protect water resources for future generations.

Because at Suntory House, every drink is an invitation to discover more.

What happens when legends of different traditions meet?

Legent Bourbon began through the collaboration of two celebrated whisk(e)y legends: Fred Noe, the seventh-generation Master Distiller of Jim Beam, and Shinji Fukuyo, Suntory’s Chief Blender.

Their goal was not simply to bring together American bourbon and Japanese craftsmanship.
It was to challenge one another’s perspectives, intentionally experiment with different techniques, and discover new possibilities for flavor by learning from each other’s traditions.

Starting with traditional Kentucky bourbon, they explored a variety of finishing methods, including w**e and sherry casks, before blending them with carefully selected straight bourbons. The result is the art of Japanese blending applied to American bourbon—a perfectly balanced yet complex and layered whisk(e)y with harmonious sweetness and spice.

At Suntory, innovation is about building upon generations of knowledge, craftsmanship, and curiosity, while staying true to the traditions we have inherited.

Because great craftsmanship evolves when different perspectives come together.

A Mizuwari, wh**ky mixed with water and ice, is one of the most iconic ways wh**ky is enjoyed in Japan today. But there was a time when wh**ky was seen as something reserved for bars and after-dinner drinks.

Wh**ky could belong alongside Japanese cuisine.

The Mizuwari became the bridge. By opening up the wh**ky's aromas and creating a lighter, more food-friendly drinking experience, it paired naturally with the delicate flavors of Japanese cooking.

Through partnerships with restaurants and a deep understanding of how people actually eat and drink, Suntory helped transform wh**ky from a drink enjoyed after the meal into one enjoyed with it.

A reminder that great craftsmanship is not only about what is in the glass, but also how it fits into people's lives.

Because every drink becomes more meaningful when it's crafted for the moments it's meant to be enjoyed.

Peat is only one part of the story. Behind it are peatlands.

These landscapes naturally filter water, store carbon, and support diverse ecosystems, while also providing the peat that shapes the distinctive character of many Scotch whiskies. Their role goes far beyond the distillery, reminding us that every bottle begins with the land

But many of Scotland’s peatlands have been damaged. Over decades, peatlands have been drained for land development and agriculture, while peat has also been extracted for horticulture and fuel. As a result, these remarkable landscapes are becoming less able to store carbon, regulate water, and produce the peat they are known for.

We believe that protecting Scotland’s peatlands is part of respecting the places behind our Scotch whiskies.

That belief inspired the launch of our Peatland Water Sanctuary™ (PWS) in 2021. Our mission is to replenish twice the amount of peat used annually in our Scotch whiskies by 2040. Working alongside scientists and local partners, we’re restoring Scotland’s peatlands through long-term research and conservation efforts.

Every great wh**ky has a story. We’re proud to help protect one of its oldest chapters.

At Suntory, creating enriching experiences has always extended beyond what’s in the glass.

This belief is reflected in Suntory’s long-standing partnership with Carnegie Hall. For more than 40 years, the two organizations have shared a commitment to the arts, and since 2006, have worked together to support music education, cultural exchange, and opportunities for the next generation of artists.

Since becoming one of Carnegie Hall’s Major Sponsors in 2022, Suntory has continued to strengthen this partnership by supporting performances and creating memorable experiences for guests.

Recently, members of Carnegie Hall Explorers and Notables donor groups gathered at Carnegie Hall to experience Hibiki alongside a live musical performance—an evening that explored how craftsmanship can be expressed across different forms of artistry. But the event was about more than wh**ky or music alone. It was about bringing people together through shared moments of creativity, discovery, and connection.

From the arts and culture to hospitality and community, Suntory has long believed that creating value means contributing to experiences that enrich people’s lives.

From Laphroaig to Bowmore and Ardmore, peat has long been an essential part of our lineup of Scotch whiskies. Understanding where these flavors begin means looking beyond the distillery to the landscapes that have shaped them for centuries.

At Yamazaki, we draw natural water from the same underground source as Rikyū no Mizu—one of Japan’s most celebrated waters.

What do birds have to do with wh**ky? More than you might think.

Birds are among the most sensitive indicators of a healthy ecosystem. Because they respond quickly to changes in their environment, birds often leave when forests become unhealthy and return when nature recovers—making them a powerful sign of a thriving ecosystem. When birds can thrive, it is often a sign that forests, water sources, and biodiversity are thriving as well.

That connection is one reason why Suntory has supported wild bird conservation since 1973. Protecting birds means protecting forests. And healthy forests help create healthy water, filtering rain through soil and vegetation into the pure groundwater that helps shape the distinctive taste and quality of Suntory wh**ky.
