What do you think of when you hear Penang?

For many, it might be Char Koay Teow, Assam Laksa, or one of the many dishes that have made this island famous.

For me, I’ve become increasingly fascinated by looking one layer deeper — at the ingredients themselves, and the people and places behind them.

The oyster.
The duck.
The nutmeg.
The taucheo.
The squid.
The chilli.
The coconut.

What can they become when we look at them through a different culinary lens?

I spent five years in France, where I learned to appreciate French gastronomy, its respect for seasonality, technique and the character of each ingredient.

Coming home, I wanted to bring that sensibility into conversation with the place I call home.

In the spirit of Malaysia’s National Day, this dinner is also my way of shining a light on the remarkable produce we have here in Penang, and the people behind it.

Penang Origins is an exploration of that idea: a six-course tasting menu built around Penang’s produce, interpreted through French cooking, with the stories and techniques behind each course shared along the way.

Not a menu inspired by Penang’s dishes, but a six-course tasting menu celebrating the ingredients that make Penang so remarkable, expressed through French technique.

we might be surprised to find food everywhere.

In the colours, textures,
seasons, and little moments around us.

Last Sunday, strangers gathered
around one long table.

Some arrived as couples.
Some came with friends.
Some knew no one.

The evening began with
Where the Clams Welcome You.

As the courses unfolded, so did the conversations.
Questions about French techniques.

Stories of Penang.

Travels shared between strangers.

By the time It’s Worth the Wait arrived,
the room felt a little different.

People weren’t simply sharing a table anymore.
They were sharing ideas.
The evening ended with The Final Note of Indulgence.

The best conversations I’ve had about food have rarely happened over the first bite.

They’ve happened afterwards.

“Why this ingredient?”
“How did this dish come about?”
“What made you pair these flavours together?”

Those conversations have always been one of my favourite parts of being a chef.
