The ingredients did all the talking. They were basically yelling, āPick me! Pick me!ā and who am I to argue?

Tigerās Kiss.
A dessert that plays with contrast; bright, silky, crisp and delicate.

Creamy fonio with scallion oil, beef tenderloin, and a dust of chili for the culture.
Fonio is one of Africaās oldest grains, and honestly, it deserves a permanent place on our tables. From West African porridges and couscous-style dishes to modern grain bowls, risottos, salads, desserts, and even baked goods, this ancient grain has been feeding communities for centuries and continues to prove just how versatile it is across different cuisines around the world.
It cooks in minutes, is naturally gluten-free, easy to digest, and rich in essential amino acidsāespecially methionine and cysteine, which are often limited in many other grains. Gram for gram, fonio offers impressive nutritional value and is increasingly being recognized as a strong alternative to quinoa.
Adding fonio to our daily diet can do us a world of good: better digestion, steadier energy, more dietary variety, and a deeper connection to indigenous ingredients that have always nourished us well. Sometimes the future of food looks a lot like the wisdom of the past.

Shrimp roll in all its glory.
I love the crunch, the creamy mayo, and the juicy shrimp. The contrast of textures just works.
Add a little yaji mayo on the side for dipping because, letās be honest, you can never have too much mayo. š
Enjoyment is like this⦠because Iām a simple woman. Give me good food, a satisfying crunch, and Iām happy.
Now thatās happiness wrapped in a crispy shell. š¤
Playing around with different textures and liquids in plating class the other day.
From a silky cocoyam purƩe to vibrant beetroot gel and fragrant efirin oil, each element brought its own character to the plate.
Itās fascinating how a simple change in texture, viscosity, or color can completely transform a dish. Thatās the beauty of platingāthere are endless possibilities, and thatās my favorite part of the process.

Moi Moi Croquettes.
Some cravings deserve a little extra attention.
Golden and crisp on the outside, soft and fluffy on the inside, these moi moi croquettes are stuffed with seasoned minced meat and zucchini, then finished with fresh tomatoes, fragrant efirin oil, and a drizzle of sriracha for just the right kick.
Now, pair this with a bowl of hot pap, and youāve got comfort food elevated.

Through my lens this weekā¦
A small collection of dishes that made it into my camera roll amidst the busy days. Iāve become more intentional about documenting the work; capturing the details, the process, and the plates that leave the pass.
Looking back at these moments is a reminder of how far weāve come, how much weāve learned, and how much there is still to create.
Progress is often quiet, found in the consistency of showing up every day and doing the work.
