Making a perfect meat pie is easy when you follow these simple rules.
1. Use cold butter or margarine
Cold butter or margarine helps the pastry become flaky. Do not use melted butter.
2. Use cold water
Always use cold water when mixing your dough. This keeps the dough light and flaky.
3. Do not knead too much
Mix the dough just until it comes together. If you knead it too much, the meat pie will become hard.
4. Let the dough rest
Cover the dough and leave it in the fridge for 20–30 minutes before rolling it out.
5. Cook the filling well
The filling should not be watery. If there is too much liquid, your meat pie will become soggy.
6. Allow the filling to cool
Do not put hot filling inside the dough. Let it cool first.
7. Roll the dough evenly
Do not make the dough too thick or too thin. A medium thickness is best.
8. Do not add too much filling
Use just enough filling so you can close the meat pie easily.
9. Seal the edges properly
Press the edges together and use a fork to lock them. This stops the filling from coming out while baking.
