THAT LITTLE NATIVE POT IS NOT JUST THERE FOR DECORATION… 👀🔥
If you grew up around Delta food, you may already know what this little native pot is.
It is called an Evwre—and this is one of those traditional details that can easily be missed when you only see the finished plate of food.
The Banga soup itself is cooked normally in a cooking pot.
But after the Banga has come together, a portion is transferred into the Evwre, where it is allowed to thicken and settle into that rich, concentrated consistency that makes you want to go back for another spoonful.
And that’s exactly what you are looking at here.
Seafood Banga.
Palm fruit richness, the flavour of seafood, and that unmistakable Delta character—all brought together before a portion gets its final moment in the Evwre.
Because sometimes, the beauty of traditional food isn’t only in the ingredients.
It’s in how we handle the food.
It’s in the little things that have been passed down.
It’s in knowing that the final texture and character of a dish can come from what happens after the main cooking is done.
And tonight, I’m taking you behind this pot.
I made a 2:30-minute video showing the process of preparing this seafood Banga, and you’ll get to see how everything comes together before we arrive at this final stage.
So don’t just look at the seafood.
Look at the soup.
Look at the thickness.
Look at the Evwre.
Because tonight, I’ll show you how we got here. 🍲🔥

Freshly prepared to order in Lagos.
Which one would you choose for your weekend table?
Something very Delta is happening in this pot… 👀🔥
And the aroma? You just had to be here.
The palm oil is not in the pot… so why is it on the plate? 👀
My Delta Ukodo — yam, unripe plantain, chicken, dried pepper and traditional spices.
No onions. No palm oil cooked into the Ukodo.
Watch how I make it, and tell me — do you eat your Ukodo with palm oil on the side or in the soup ?
