리스본에서 한식당 Pabul(파불)​을 운영하면서 요즘 많은 생각을 하게 됩니다. 유럽에서 한국의 맛을 지킨다는 것은 생각보다 쉽지 않습니다. 한국에서는 쉽게 구할 수 있는 식재료도 이곳에서는 구하기 어렵고, 높은 물류비와 인건비, 임대료를 감당하면서도 가능한 한 한국에서 먹던 그 맛을 전하기 위해 노력하고 있습니다.

그런데 가끔 한국에서 오신 분들 중에는 해외의 작은 한식당에서도 한국과 똑같은 가격과 서비스, 식재료와 환경을 기대하고, 조금이라도 기대와 다르면 매우 공격적인 표현으로 리뷰를 남기는 경우가 있습니다. 물론 음식이 부족하면 지적해 주세요. 서비스가 잘못되었다면 말씀해 주세요.
정당한 비판은 저희도 겸허하게 받아들이고 고치겠습니다.

하지만 사실과 다른 이야기, 지나친 과장과 모욕적인 표현은 정당한 비판과는 다르다고 생각합니다. 한두 문장의 글은 몇 분이면 쓸 수 있지만, 그 글을 받는 사람에게는 오랫동안 지켜온 노력과 자부심을 포기하고 싶을 만큼 큰 상처가 되기도 합니다.

저 역시 최근 몇몇 일을 겪으며 솔직히 이런 생각까지 했습니다. “내가 왜 이렇게까지 힘들게 한식을 지키려고 하고 있을까.”

유럽에는 이제 한국인이 직접 운영하는 한식당이 점점 귀해지고 있습니다. 먼 타국에서 한국의 음식과 문화를 지키려 노력하는 작은 식당들이 계속 남아 있을 수 있도록 조금만 따뜻하게 바라봐 주셨으면 합니다.
