Bachpan ki yaadein taza karne wali meri Nani Amma ki authentic Chicken Yakhni Pulao recipe! Har chawal ka dana khila khila, khushboodar aur chicken bilkul juicy banta hai.
π INGREDIENTS:
For The Yakhni (Aromatic Stock):
Chicken (Bone-in, medium cuts): 750g
Water: 5 to 6 cups
Fennel Seeds (Saunf): 1.5 tbsp
Whole Coriander Seeds (Sabut Dhaniya): 1.5 tbsp
Cumin Seeds (Zeera): 1 tsp
Whole Garlic Bulb: 1 small (cut in half)
Ginger: 2-inch piece (bruised)
Medium Onion: 1 (quartered)
Black Cardamom (Badi Elaichi): 2
Green Cardamoms (Choti Elaichi): 4β5
Cinnamon Sticks (Darcheeni): 2
Cloves (Laung): 5β6
Star Anise (Badiyan ka Phool): 1
Salt: 1.5 tsp
For The Pulao:
Basmati Rice (Premium long grain - soaked 30 mins): 500g (approx. 2.5 cups)
Desi Ghee / Oil: 1/2 cup
Sliced Onions: 2 medium
Ginger-Garlic Paste: 1.5 tbsp
Whisked Yogurt (Dahi): 1/2 cup
Whole Green Chilies: 5β6 (slit in center)
Garam Masala Powder: 1/2 tsp
Black Pepper Powder: 1/2 tsp
Salt: To taste (adjusted after checking yakhni)
Kewra Water: 1 tsp
Fried Onions (Birista) & Fresh Mint: For garnish
π©βπ³ STEP-BY-STEP METHOD:
1. Make the Yakhni: In the brass degh/pot, add water, chicken, fennel seeds, whole coriander seeds, whole spices, garlic, ginger, onion, and salt. Bring to a boil, then simmer on medium-low for 15β20 minutes until the stock turns golden and aromatic.
2. Strain: Remove chicken pieces and strain the stock into a bowl. Discard the boiled whole spices.
3. Searing (Bhunai): In the same pot, heat desi ghee. SautΓ© sliced onions until golden brown. Add ginger-garlic paste and stir for 1 minute.
4. Combine: Add the cooked chicken, slit green chilies, yogurt, garam masala, and black pepper. Bhunai on high heat for 3β4 minutes until ghee separates.
5. Add Rice & Stock: Add soaked and drained basmati rice. Pour in 4 to 4.5 cups of the hot strained yakhni. Check and balance salt.
6. Simmer: Cook on high heat until the liquid level reduces to the surface of the rice and steam holes form.
7. Dum (Steam): Sprinkle kewra water on top. Seal with a tight lid on the lowest flame (dum) for 12β15 minutes.
8. Rest & Serve: Let it rest unopened for 5 minutes. Gently fluff the grains from the edges. Serve hot with zeera raita and kachumber salad!
