FSMA 204 compliance is here — are you ready?
The FDA now requires food companies to capture and share traceability data across their supply chains. That means documenting not just where and when food moves, but also who handled it, what was done, and how it was transformed.
Here’s the key:
CTEs (Critical Tracking Events) → the major checkpoints in your supply chain (harvest, cooling, packing, shipping, receiving, transformation).
KDEs (Key Data Elements) → the essential details tied to each event (date, crew ID, lot code, cooling logs, SSCC, carrier GLN, etc.).
For leafy greens, this could look like:
🌱 Harvest → date, field GLN, crew ID, lot code
❄️ Cooling → cooling unit ID, time, temperature logs
🚚 Shipping → SSCC, departure time, carrier GLN
