🌯 Taco Bell–Style Cheesy Quesarito 🧀
The ultimate mashup—seasoned beef, Spanish rice, melty cheese, and smoky chipotle sauce wrapped in double tortillas and grilled to perfection 😍
🛒 Ingredients
Beef
1 lb ground beef
1 packet taco seasoning
½ cup water
Rice
1 cup cooked Spanish rice (or seasoned rice)
Chipotle Sauce
½ cup sour cream
2 Tbsp chipotle sauce or adobo sauce
1 tsp lime juice (optional)
Quesaritos
4 large flour tortillas (burrito size)
4 small flour tortillas
2 cups shredded Mexican blend or cheddar cheese
👩🍳 Instructions
Cook the beef
Brown ground beef in a skillet over medium heat. Drain grease.
Add taco seasoning + water, simmer 5 minutes until thick.
Make the chipotle sauce
Mix sour cream, chipotle sauce, and lime juice. Set aside.
Cheesy tortilla layer
Place a large tortilla in a skillet over low heat.
Sprinkle cheese on top and place a small tortilla over the cheese.
Cook until cheese melts and tortillas stick together.
Assemble
On the small tortilla side, add:
Seasoned beef
Spanish rice
Drizzle of chipotle sauce

Ingredients
2 cups cooked rice
2 cups cooked chicken, shredded
2 cups broccoli florets (fresh or frozen)
1 can condensed cream of chicken soup
1 cup shredded cheddar cheese
Optional (but 🔥):
½ cup milk (for extra creaminess)
Salt & pepper to taste
½ tsp garlic powder or onion powder
Extra cheese for topping
Instructions
Preheat oven to 350°F. Grease a casserole dish.
Prep broccoli
If fresh: steam or microwave 2–3 minutes until just tender.
If frozen: thaw and drain well.
Mix it all together
In a large bowl, combine:
Rice
Chicken
Broccoli
Cream of chicken soup
Cheese
Milk (if using)
Seasonings
Assemble
Spread mixture evenly into the casserole dish. Sprinkle extra cheese on top if you want it extra cheesy 🧀
Bake

Cream Cheese Enchiladas Recipe
Ingredients:
1 (8 oz) package cream cheese, softened
3 cups shredded cooked chicken
2 cups shredded Mexican cheese
3 tablespoons unsalted butter
2 cups chicken broth
1 (4 oz) can diced green chiles
8 (6-inch) corn tortillas
3 tablespoons all-purpose flour
1 tablespoon lime juice
Optional: 1/2 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro for garnish
Optional toppings: diced tomatoes, sliced olives, sliced jalapeños, chopped green onions
Instructions:
Preheat the oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
In a bowl, combine half of the cream cheese, chicken, 1 cup of cheese, lime juice, and chili powder (if using). Season to taste.
Fill tortillas with 2-3 tablespoons of the mixture, roll, and place seam side down in the dish.
In a saucepan, melt butter, whisk in flour for 2-3 minutes. Season, add chicken broth, green chiles, and the remaining cream cheese. Cook until thickened.
Pour the green chile sauce over enchiladas and top with the remaining cheese.
Bake for 20-25 minutes. Optionally, broil for a lightly browned top. Allow it to rest before serving. Garnish with cilantro and serve.

Beef and Macaroni Casserole
Ingredients
1 lb ground beef
1 small onion, diced
2 cups elbow macaroni, uncooked
1 can (14.5 oz) diced tomatoes, undrained
Optional but recommended
1–1½ cups shredded cheese (cheddar, Colby-Jack, or mozzarella)
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp Italian seasoning or paprika
1 cup water or beef broth (if needed)
Instructions
Preheat oven to 350°F. Lightly grease a 9x13 or similar casserole dish.
Brown the beef
In a large skillet over medium heat, cook the ground beef with the diced onion until beef is fully browned and onion is soft. Drain excess grease.
Season it
Stir in salt, pepper, garlic powder, and Italian seasoning (or paprika).
Assemble the casserole
Add uncooked macaroni and the entire can of diced tomatoes (juice and all) to the skillet.
Stir well. If it looks dry, add about 1 cup water or broth.
Transfer & cover
Pour mixture into the casserole dish. Cover tightly with foil.
Bake
Bake for 45 minutes, stirring once halfway through if possible.
Add cheese (optional but yes)
Uncover, sprinkle cheese on top, and bake 10–15 more minutes until cheese is melted and pasta is tender.
Rest & serve
Let sit 5 minutes before serving.
Easy Variations

Slow Cooker Parmesan Garlic Chicken & Potatoes
Ingredients
4–6 boneless skinless chicken thighs (or breasts)
1½ lbs baby gold potatoes, halved (or quartered if large)
1 cup heavy cream (or half & half)
½ cup chicken broth
¾ cup grated Parmesan cheese
4 cloves garlic, minced (or 1½ tsp garlic powder)
1 tsp Italian seasoning
½ tsp paprika
½ tsp onion powder
Salt & black pepper to taste
2 tbsp butter, cut into small pieces
Optional: chopped parsley for garnish
Instructions
Prep the crockpot
Spray with nonstick spray.
Add potatoes to the bottom. Season lightly with salt & pepper.
Season the chicken
Sprinkle chicken with salt, pepper, paprika, onion powder, and Italian seasoning.
Lay chicken on top of the potatoes.
Make the sauce
In a bowl, whisk together:
Heavy cream
Chicken broth
Parmesan cheese
Garlic
Pour sauce evenly over chicken and potatoes.
Dot butter pieces over the top.
Cook
LOW: 5–6 hours
HIGH: 3–4 hours
Chicken should be tender and potatoes fork-soft.
Optional finish
If you want the sauce thicker, remove lid for the last 20–30 minutes.
Sprinkle parsley before serving
