I love ordering a vegetable omelet filled with onions, peppers, and mushrooms when I eat out for breakfast. But what I've discovered I really love when cooking at home, is my veggies piled atop creamy and fluffy scrambled eggs. This way, I get way more veggies than I can place in a two-egg omelet.
Here, I've sautĆ©ed my veggies in coconut oil and spiced with Himalayan salt, freshly ground pepper, and sweet paprika. In the same pan, but separately, I've sautĆ©ed baby spinach, on which I lay the eggs. š
In a separate pan, I've scrambled my eggs, adding just a smidgen of goat cheese for added creaminess and flavor. But trust me, this meal is just as yummy dairy-free.
So, if you struggle with making a perfect veggie-filled omelet, stop resisting and think outside the omelet.

What's in the glass? Warm pot liquor. (Potlikker, as my Southern grandmother might have spelled it.)
Regardless of spelling, I'm talking about the vitamin and mineral-packed liquid that remains in the pot in which you steamed or boiled greens or vegetables. It's liquid you don't want to waste!
This morning, I steamed sweet potatoes in my Instant Pot. What remained was a slightly sweet liquid. I could hear my father's words reminding me: That's good potlikker!
So, save your vegetable liquid and use it as a soup base or a sautƩ liquid. Or just drink a warm glass.
