BACK TO SCHOOL TORTILLA PIZZA 🍕✨
Pack them cold and let UVI serve them hot.
INGREDIENTS
⭐ 3 to 4 medium tortillas
⭐ 6 tbsp marinara sauce
⭐ 1 cup grated mozzarella cheese
⭐ 9 to 12 slices mini pepperoni (optional)
⭐ Fresh basil leaves, for garnish
RECIPE
1. Preheat the oven to 430F and line a sheet pan with parchment paper
2. Using scissors, cut each tortilla into a heart shape and place on the pan
3. Spoon the marinara sauce over each tortilla and spread it out, leaving some space at the edge to create a crust
4. Top with the mozzarella cheese and add the pepperoni slices if using
5. Bake for 8 to 9 minutes or until the cheese is bubbling and the crust is golden brown
6. Garnish with fresh basil leaves
Pack one in the UVI in the morning and it's hot by the time lunch comes around.
Pack it at 7am and let them open it hot at noon 🍱
No microwave line and no cold leftovers.
MEAL PREP VEGGIE BREAKFAST BURRITOS 🌯🥦

INGREDIENTS
⭐ 1 small yellow onion, chopped
⭐ 1 small red bell pepper, chopped
⭐ 1 small head broccoli, chopped
⭐ 1 tbsp extra virgin olive oil
⭐ 1 tsp paprika
⭐ ½ tsp ground cumin
⭐ Salt and pepper
⭐ 6 slices cheddar cheese
⭐ 4 large tortilla wraps
RECIPE
1. Preheat oven to 400F
2. To a medium non-stick baking sheet, transfer the veggies, spices, salt, pepper and olive oil
3. Cook for 30 minutes or until the broccoli is fork tender
4. In a medium mixing bowl, mix together the ingredients of the egg mixture, then pour over the veggies
5. Transfer the tray to the oven and bake for 10 to 15 minutes or until the egg mixture is firm
6. Once cooled, cut into 4 rectangular pieces
7. Layer on the cheddar, wrap each egg rectangle into a tortilla, then freeze for up to 3 months
