Fall-Apart Beef Roast with Peppers
You need (serves 4-5):
1.5 kg / 3-4 lb beef chuck roast
2 tbsp olive oil
Salt, black pepper, 1 tsp paprika, 1 tsp garlic powder
1 large onion, sliced
1 red bell pepper, sliced + 1 green bell pepper, sliced
4-5 garlic cloves, smashed
1 tbsp tomato paste
1 cup beef broth
1/2 cup pepperoncini juice or water + 1 tbsp Worcestershire sauce
1 tsp dried oregano / thyme
2 tbsp butter (for richness)
Method:
1. Sear:
Pat roast completely dry, season generously all over with salt, pepper, paprika, garlic powder. Heat oil in a heavy pot / Dutch oven on high. Sear roast 3-4 min per side until deep brown crust. Take out.
2. Veggies:
In same pot, add onion and peppers. Cook 4-5 min until soft. Add garlic and tomato paste, stir 1 min.
3. Braise:
Pour in beef broth, pepperoncini juice, Worcestershire, oregano. Scrape the bottom. Put roast back in, spoon some peppers on top.
Cover tight with lid/foil.
Oven: 160°C / 320°F for 3 to 3.5 hours
Slow Cooker: Low 8 hours or High 5 hours
It's done when you can pull it with a fork, like in your screenshot.
4. Finish:
Remove roast to a board, shred slightly. Whisk butter into the juices in the pot to make a gravy. Pour that gravy + peppers back over the beef.
Serve over mashed potatoes, rice, or with crusty bread.
Pro tip: Don't skip the sear, and cook it low & slow. If you want more heat, add 3-4 whole pepperoncini peppers like the Mississippi pot roast version.
FLAME-SEARED TOMAHAWK RIBEYE
INGREDIENTS:
1 Tomahawk Ribeye steak (1.2-1.5kg)
2 tbsp olive oil
2 tbsp salt + 1 tbsp black pepper (coarse)
1 tbsp garlic powder + 1 tbsp paprika
50g butter
4 garlic cloves crushed
2 sprigs rosemary / thyme
FOR SEAR/GLAZE (optional):
1 tbsp honey / brown sugar
1 tsp chili flakes
METHOD:
Prep: Take steak out of fridge 1 hour before. Pat DRY completely. Rub with oil, salt, pepper, garlic powder, paprika.
Slow Cook First (Reverse Sear):
Oven at 120°C / 250°F for 60-75 mins till internal temp is 50°C / 122°F for medium-rare. Use meat thermometer if you have it.
Rest: Rest 10 mins covered with foil.
Flame Sear: Heat cast iron pan SMOKING hot. Add butter, crushed garlic, rosemary. Sear steak 90 sec each side, basting with melted butter. If you want that glaze in video, brush with honey/chili mix last 30 sec.
Final Rest: Most important! Rest 10-15 mins on a wooden board. Don't cut early or juice will run out.
Serve: Slice against the grain. Sprinkle flaky salt.
Tips:
Dry = better crust. Don't skip patting dry
Don't press it while searing
Internal temp: 52°C = rare, 57°C = medium-rare, 62°C = medium

🥔 Crispy Garlic Butter Hasselback Potatoes
🥔 Ingredients
6 medium potatoes
4 tbsp melted butter
2 tbsp olive oil
4 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
½ tsp paprika
½ tsp black pepper
½ tsp salt
¼ cup grated Parmesan
2 tbsp chopped fresh parsley
Optional: extra butter for topping
👨🍳 Method
Preheat oven to 425°F (220°C).
Wash and dry the potatoes. Place each potato between two chopsticks and make thin slices across it, stopping before cutting all the way through.
Mix melted butter, olive oil, garlic, oregano, thyme, paprika, salt and black pepper.
Brush the garlic-butter mixture generously over the potatoes, making sure it gets between the slices.
Place on a lined baking tray and roast for 40–50 minutes.
Remove and brush with more garlic butter. Sprinkle with Parmesan.
Return to the oven for 10–15 minutes, until the edges are golden brown and crispy.
Finish with fresh parsley and a small piece of butter on top.
🔥 Best tip: After about 30 minutes, gently fan the potato slices open with a fork and brush more garlic butter between them. This makes them extra crispy and flavorful.
