🍳 Lowcountry Kitchen with Mark: The Seasoning Process

September Cast Iron Series - Week 1 of 4

Cast iron seasoning isn't magic - it's science and patience. You build up thin layers of polymerized oil, one coat at a time. Each layer bonds to create that non-stick, rust-resistant surface we love.

Here's the real process:

✅ Clean down to bare metal (if needed)
✅ Apply THIN layer of oil (flaxseed works best)
✅ Wipe off excess until it looks dry
✅ Bake at 450°F for 1 hour
✅ Repeat 3-6 times

The secret? Thin layers. Too much oil creates a sticky mess that flakes off.
Your cooking journey works exactly the same way.
Each delicious recipe is a thin layer building memories with your family. Consistent meals over time create unbreakable traditions. But try to cook everything at once? Your kitchen gets overwhelmed and your family "flakes off" - aka they're not excited anymore.

Just like my grandmother's 60-year-old skillet, the best kitchens are built layer by layer, recipe by recipe, with patience and love.

Ready to start seasoning your kitchen the right way?

PART 2: DEBUNKING THE SOAP MYTH

🍳 You've Been Lied To About Cast Iron 🍳

"Never wash your cast iron with soap!"

You've probably heard it. Maybe your grandmother told you. Maybe you've been avoiding soap for years because you were afraid it would ruin your skillet.
It's time to set the record straight.

Here's the truth: Using mild dish soap won't destroy your cast iron or ruin your seasoning.
This myth comes from over a century ago when soap was made with lye—a harsh chemical that could actually damage cast iron. But modern dish soaps are gentle and won't harm properly seasoned cast iron.
What actually matters:
✓ Use mild soap
✓ Avoid harsh scrubbers
✓ Dry immediately (water is the real enemy)
✓ Reapply a light coat of oil

That's it.
The real rule isn't "don't use soap." The real rule is "don't leave water on your cast iron."
Water causes rust. Soap doesn't.

Stop being afraid of your skillet. Wash it properly. Care for it consistently. And it will last a lifetime.

The Story Behind the Recipe

My grandmother never owned fancy cookware. What she had was a well-seasoned cast iron skillet passed down through three generations and the wisdom that the best food comes from the heart.
I can still see her arranging golden peach slices in that black iron skillet, flour dusting her apron. She never measured anything—it was all done by feel, by experience, by kitchen wisdom earned from years of feeding people you love.
"Mark," she'd say, "the secret isn't in fancy ingredients. It's in taking your time and doing it right."

That cast iron skillet was the secret to perfect peach cobbler.

But here's the real recipe: This cobbler is about slowing down, taking time, and creating moments that bring people together.

Every time I make this cobbler, I'm reminded of summer evenings on grandmother's porch, laughter mixing with the clink of spoons, and the simple joy of sharing something made with love.

That's what Lowcountry cooking is really about—not just feeding people, but nourishing them. Creating memories around a well-loved table, one cast iron skillet at a time.Get the full recipe and grandmother's secrets:
