Anti-Inflammatory Garlic Steak & Veggie Sheet Pan

40 min | High-protein | Serves 4

Why it's anti-inflammatory:
Lean Beef + Broccoli + Zucchini + Peppers: Protein + sulforaphane + antioxidants
Baby Potatoes (with skin): Fiber + potassium, low glycemic when roasted
Olive Oil + Garlic + Ginger: Healthy fats + anti-inflammatory core
Coconut Aminos instead of soy / sugary glaze: No MSG, less sodium

Ingredients:
500g lean steak (sirloin or fillet), cut into 1.5-inch cubes
400g baby potatoes, halved
2 cups broccoli florets
1 large zucchini, thick sliced
1 bell pepper, sliced
3 tbsp olive oil, divided
4 garlic cloves minced
1 tsp fresh ginger grated

For Anti-Inflammatory Marinade/Glaze:
2 tbsp coconut aminos or low-sodium tamari
1 tbsp balsamic vinegar
1 tbsp olive oil
1 tsp Dijon mustard
½ tsp turmeric + ½ tsp black pepper
½ tsp smoked paprika
½ tsp dried oregano + thyme
Salt
1 tsp lemon juice
Optional: 1 tsp raw honey or dates syrup

Method:
Marinate: Whisk marinade ingredients. Toss steak cubes in half of it. Rest 15 min (or 2 hrs fridge for best).
Potatoes First: Toss potatoes with 1 tbsp olive oil, garlic, salt, pepper. Spread on sheet pan. Roast 425°F / 220°C 15 min.
Add Veggies: Toss broccoli, zucchini, pepper with remaining olive oil, salt, pepper. Add to pan with potatoes.
Add Steak: Nestle marinated steak bites on top. Drizzle remaining marinade.
Roast: Roast 12-15 min for medium-rare steak + tender veggies. For more char, broil 2 min last.

Anti-Inflammatory Creamy Italian Chicken Meatballs

35 min | High-protein | Serves 4

Why it's anti-inflammatory:
Chicken/ Turkey mince + Herbs: Lean protein + polyphenols
Cashew-Coconut Cream: No heavy cream, healthy fats + magnesium
Bell Peppers + Onion + Garlic: Antioxidants + quercetin
Turmeric + Black Pepper + Oregano + Parsley: Anti-inflammatory Italian heat
Olive Oil Seared: No butter-fried

Ingredients:
For Meatballs (12 large):
500g chicken or turkey mince (or lean beef)
1 small onion grated, squeeze water out
2 garlic cloves minced
¼ cup almond flour + 1 tbsp ground flax (binder)
1 egg
2 tbsp dhania + parsley chopped
1 tsp Italian seasoning + ½ tsp turmeric + ¼ tsp black pepper + salt
¼ tsp chili flakes
1 tbsp olive oil

For Creamy Sauce:
1 tbsp olive oil
1 small red onion sliced
1 cup mixed bell peppers / shimla, chopped
2 garlic cloves minced
1 cup cashews soaked 15 min in hot water then blended with 1 cup water OR 1 can light coconut milk
½ cup chicken bone broth
¼ cup goat mozzarella or nutritional yeast for cheese pull (optional)
1 tsp Dijon + 1 tsp lemon juice
Salt, pepper, Italian herbs, dhania to finish

Method:
Meatballs: Mix mince, grated onion, garlic, almond flour, flax, egg, herbs, spices. Don't overmix. Roll 12 big balls like photo.
Sear: Heat 1 tbsp olive oil in skillet. Sear meatballs 6-7 min until golden crust forms. Remove.
Veggies: Same pan, add 1 tbsp oil, sauté onion + peppers 3 min, garlic 1 min.
Cream: Pour blended cashew cream + bone broth + Dijon + lemon. Simmer 3 min until thick.
Combine: Add meatballs back, spoon sauce over. Cover, simmer 8-10 min. Add mozzarella/nutritional yeast at end for that cheesy drip in photo.

Why it's anti-inflammatory:
Masoor Dal + Chickpeas: Fiber + plant protein + iron
Turmeric + Cumin + Garlic + Parsley: Anti-inflammatory spice trio
Olive Oil Pan-Fry: No deep frying in seed oil

Ingredients:
For Patties:
1 cup brown or masoor lentils, soaked 2 hrs then cooked until soft but not mushy
½ cup cooked chickpeas or leftover quinoa
1 small onion, finely chopped
2 garlic cloves, minced
1-inch ginger, grated
½ cup carrots, grated
¼ cup dhania + parsley, chopped
1 flax egg: 1 tbsp ground flax + 2.5 tbsp water (sit 5 min)
2 tbsp almond flour or besan for binding
Spices: ½ tsp turmeric, 1 tsp roasted cumin / zeera, ½ tsp coriander, ¼ tsp black pepper, salt, pinch chili flakes
2 tbsp olive oil for frying
Lemon zest

For Herb Yogurt Dip:
½ cup Greek yogurt or hung curd
1 tbsp lemon juice
1 tbsp olive oil
Dhania + mint chopped, salt + pepper, pinch zeera

Method:
Mash: Roughly mash lentils + chickpeas - keep some texture like in your photo, don't make paste.
Mix: Add onion, garlic, ginger, carrot, herbs, flax egg, almond flour/besan, all spices, lemon zest. Mix well. Rest 10 min in fridge so it firms.
Shape: Wet hands, form 10 thick patties like in picture.
Crisp: Heat olive oil in non-stick pan. Cook 4-5 min per side on medium heat until deep golden & crispy. Don't crowd.

Ingredients:
For Pears:
2 ripe but firm pears, halved + cored
1 tbsp olive oil or avocado oil
½ tsp Ceylon cinnamon
Pinch turmeric + black pepper + salt

For Topping:
½ cup blueberries
¼ cup pomegranate seeds / anar
¼ cup raspberries
⅓ cup goat blue cheese or sheep blue, crumbled

For Drizzle:

Method:
Bake: Preheat oven to 375°F / 190°C. Brush pears with olive oil, sprinkle cinnamon, turmeric, pepper, salt. Bake cut-side up 15-20 min until tender and caramelized.
Toast: Toast walnuts 3 min.
Assemble: Place warm pears on plate, fill with blue cheese so it softens slightly.

Ingredients:

4 cups chicken bone broth

Method:
Dough: Mix flax + water, let gel 2 min. Whisk almond flour, tapioca, baking powder, turmeric, pepper, salt. Add flax egg, olive oil, warm water + honey. Form soft dough. Rest 10 min.
Roll: On parchment with olive oil hands, roll dough into 12x9 inch rectangle.

Sear: Heat large karahi / wok on high heat. Add oil, add chicken, sear 8-10 min until golden and tikka masala sticks. Don't add water.
Veggies: Add tomatoes, onions, hari mirch around chicken. Cover 5 min so tomatoes soften but stay chunky.
Dry: Uncover, bhunofy on high heat 5-7 min until masala is dry and coats chicken
