Balancing flavours in a cake is what separates a nice cake from one people can’t stop thinking about. It’s less about adding many flavours and more about making sure they work together instead of fighting each other.

Here’s how to do it like a pro:

1. Understand the 4 key taste roles

Every well balanced cake usually combines these:

• Sweet
Sugar, chocolate, caramel

• Acidic (tangy)
Lemon, orange, zobo, berries

• Rich (fatty/creamy)
Butter, cream, cheese

• Bitter or deep
Cocoa, coffee, dark caramel

👉 A great cake hits at least 2–3 of these, not just sweet.

2. Follow the balance rule

Think in contrasts:

• Too sweet? →add something tangy (lemon, cream cheese)

• Too rich/heavy? → add something light (fruit, whipped cream)

• Too sharp/tangy? → soften with sweetness or cream

Example:
Chocolate cake (rich + sweet) + raspberry filling (tangy) + whipped cream (light) = balanced

This is where most people go wrong.

👉 Stick to:

• 1 main flavour (dominant)

• 1 supporting flavour

• 1 accent (optional)

This feels more refined and controlled.

Crispy Fried Chicken Recipe 🍗

Ingredients

Chicken
• 1 kg chicken pieces (drumsticks, wings, thighs, or mixed cuts)
• 2 cups buttermilk (or 1½ cups milk + 2 tbsp lemon juice)
• 2 eggs (optional, for extra coating)

Seasoning Marinade
• 2 tsp salt
• 1 tsp black pepper
• 2 tsp paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp ginger powder
• 1 tsp curry powder
• ½ tsp cayenne pepper (optional)
• 1 tbsp seasoning cube (optional)

Flour Coating
• 2½ cups all-purpose flour
• ½ cup corn flour/cornstarch (for extra crispiness)
• 1 tsp salt
• 1 tsp paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp black pepper

For Frying
• Vegetable oil (enough for deep frying)

Method
1. Marinate the Chicken
• Wash and pat the chicken dry.
• Mix chicken with buttermilk, eggs, and all marinade spices.
• Cover and refrigerate for at least 2 hours (overnight gives the best flavor).
2. Prepare the Coating
• Mix flour, corn flour, and all coating spices in a bowl.
• Remove chicken from marinade and coat well in the flour mixture.
• Press the flour onto the chicken to create a rough crispy texture.
3. Fry the Chicken
• Heat oil to about 170–180°C.
• Fry chicken pieces in batches for 12–18 minutes depending on size.
• Turn occasionally until golden brown and fully cooked.
4. Drain and Serve
• Place fried chicken on a rack or paper towel to remove excess oil.
• Serve hot with fries, coleslaw, rice, or your favorite sauce.

Secret Tips for Extra Crispy Chicken 🤤

✅ Add corn flour/cornstarch to the flour mix.
✅ Double coat: flour → marinade → flour again.
✅ Do not overcrowd the frying oil.
✅ Let coated chicken rest for 10 minutes before frying for a thicker crust.

Took me a full year getting this recipe right. It’s perfect, not too sweet and fluffy.

Tips for people that use our recipe :

🧁Whip eggs for at least 10 mins.

🧁Jumbo or x large eggs. Don’t use cold eggs. The bigger the eggs the better.

🧁Caramel essence makes a huge difference. It kills that eggy taste. Woolworths or Barco caramel essence

🧁Freeze your sponges while they’re warm. Decorate your cake with frozen sponges.

🧁Don’t add too much batter in your pan because you want to get thick layers. This can dry out your cake, rather have smaller layers and More layers of sponge.

🧁If you’re using our recipe and the sponges aren’t as fluffy as ours, add 5 minutes to your normal whipping time.

🧁This recipe can’t sit out too long on your counter. Bake immediately after mixing. Leaving the eggs on your counter deflates the air you have added to your eggs.
