Sometimes the simplest recipes are the best.
I’m roasting eggplant with olive oil, garlic, cherry tomatoes, salt, and pepper. No fancy ingredients, just fresh flavours and a little patience while the oven does all the work.

Back in Calabria, this was a tradition in many homes. At the end of summer, we would pick the cherry tomatoes and hot chilli peppers, thread them together by hand, and hang them to dry.
They weren’t just decorations. They were a way of preserving food for the months ahead, filling the kitchen with colour, flavour, and memories.
Some traditions may be old, but they still bring a smile to my face every time I see them.
Tonight I decided to make ricotta and Parmesan ravioli using some leftover pasta dough from earlier today. It was the perfect way to avoid waste and create something delicious from ingredients I already had on hand.
The ravioli turned out wonderfully delicate and flavorful, with a creamy filling that paired beautifully with the fresh pasta. Sometimes the simplest meals are the most satisfying!
Today I made a batch of homemade chiacchiere and, to keep them a little lighter, I sprinkled them with Equal Spoonful instead of sugar. They came out beautifully crisp, sweet, and absolutely delicious!
I love finding simple ways to enjoy traditional recipes while making them work for my lifestyle. Have you ever tried using Equal in your baking or desserts?
A friend called to say she was popping over for lunch, so out came the fresh tagliatelle and homemade meatballs. 🍝❤️
Sometimes the best meals aren’t planned. They’re shared with good company, a full table, and a lot of laughter.
Tonight I made a hearty minestrone packed with fresh vegetables and added a little pasta to make it even more comforting. Finished with a sprinkle of Parmesan, it’s simple, wholesome, and full of flavour. Do you put pasta in your minestrone?”
