In Italy, the hour before dinner has never been something to rush.⁠
⁠
It begins with ice in the glass, the oils of orange released over the rim, and that first bittersweet sip that quietly tells the appetite what is coming next.⁠
⁠
The Negroni belongs to this hour. Deep crimson & unmistakably bittersweet, it has travelled through generations of Italian bars and tables without losing the ritual at its centre.⁠
⁠
This week, that ritual is moving through the State Buildings in different hands, different glasses & different points of view. Some familiar, some a little unexpected, all beginning from the same place.⁠

A Negroni, a table, and nowhere else to be just yet.

Chef Lucas, Thyago Rocha & Marco have done the planning, the tasting & the talking. Now comes the good part: Negroni poured, plates moving, music up & a dinner that travels through the State Buildings as the night unfolds.⁠

Just beyond POST’s doorstep, Postal Hall is pouring the first chapter of Negroni Week.⁠

The familiar bitterness of Campari runs through every glass, but each one takes its own direction. A Classic Negroni beside something softer, brighter or altogether unexpected. Coffee, cocoa, yuzu, lemon myrtle, watermelon & mandarin moving the ritual somewhere new, while still keeping the unmistakable character of the original close by.⁠

From the first Campari Spritz to the final pour, consider Postal Hall your aperitivo stop before the evening finds its way to the table.⁠

There are some things that only make sense by hand.⁠
⁠
For Head Chef Thyago Rocha, fresh pasta begins as a single sheet, passed through the rollers until it grows thinner, softer & almost translucent. It is laid flat, dusted generously with flour and left for a moment before being folded loosely back towards itself, ready for the knife.⁠
⁠
Then comes the cut. Steady, measured, but never so perfect that the hand disappears from it. Each ribbon carries a slight variation, the quiet signature of pasta made rather than manufactured.⁠
⁠
And finally, the unfurl. The folded sheet loosens into long ribbons, falling away from one another before being gathered for the table.⁠
⁠
A process guided by touch, instinct & repetition. The kind of Italian tradition that has never really needed reinventing.⁠

The beauty of burrata is in its simplicity.⁠

Cut through the delicate shell and the centre gives way — soft, creamy & generous, just as it should be. Ours comes from local artisans , served with grapes, vincotto, hazelnuts & sundried tomatoes for sweetness, crunch & a little Italian sharpness around the edges.⁠

Simple in appearance, full in feeling.⁠

In Italian kitchens, tradition is often measured by instinct.⁠
⁠
A little more flour. A softer fold. The feeling of dough beneath the hands before it is rolled, cut & shaped for the table.⁠

Fresh pasta has always belonged to this kind of ritual — not rushed, not overworked, but guided by time, touch & the quiet confidence of those who learned by watching.

Beef carpaccio is Italian simplicity at its most confident.⁠

Thinly sliced beef, capers, Parmigiano & rocket — nothing hidden, nothing overworked, just a few good ingredients given room to speak for themselves.⁠

It is a dish built on restraint, where the sharpness of capers, the salt of Parmigiano and the peppery lift of rocket bring balance to every bite.

On the walls at Post, traces of the old General Post Office remain — stamps, markings & fragments from a time when this room helped carry the city’s messages from one hand to the next.⁠

Now, those stories sit quietly beside another kind of tradition. The Italian kind, passed down through families, held in the way pasta is made, wine is poured, bread is torn & a table is gathered.⁠
