Georgian hospitality is an ancient tradition based on the belief that every guest is sent to your home by God.
Hospitality is passed down from generation to generation as a code of honour, where a generous table, sincere communication and respect for a person are considered the most important things.
There are traditions that are carefully preserved and strictly followed.
The tradition of the guest: A guest is a messenger from above, and therefore must be welcomed in the best possible way.
Code of honour: In the past, refusing a traveller or treating them badly brought shame upon the whole family.
Love of communication: Georgians love heartfelt conversations, songs and long feasts with wise toasts.
An open heart: The joy of meeting a new person comes from the heart, not simply from politeness.
Odessa (Ukrainian) hospitality is a tradition of a southern port city at the crossroads of cultures, where for centuries Greeks, Jews, Ukrainians, Bulgarians, Georgians and Armenians lived.
An open character, humour and friendliness became the foundation of the local mentality.
Multiculturalism: the city was built by people from different backgrounds who needed to learn how to communicate and live together.
The spirit of the port: new people, ships and news were constantly arriving through the port, teaching the locals to remain open to the world.
Trade: at famous markets such as Privoz, the ability to charm and connect with a customer or conversation partner became second nature.
Humour: a light-hearted attitude towards life helps people welcome guests with a smile and a sense of self-irony.
Love of home: Odessans genuinely love their city and strive to show every visitor the very best of it.

Why does Georgia have the most delicious cuisine in the world?
Because the combination of sunshine, fresh spring water, crisp mountain air, temperament, and hospitality can turn the most ordinary chicken into a fighting rooster. π
One of Georgia's legendary dishes is Satsivi We will prepare it together at our workshop on 20 September
At the workshop, we will make a different version of Satsivi from the one I'm sharing here.**
But first, let me tell you a little about this legendary dish.

Which bird is best?
π¦ Turkey is the traditional choice.
π Chicken is the more budget-friendly option.
Australian chicken tastes better than turkey and better than chicken from many other countries. But it must be a fatty, free-range chicken or a good-quality farm chicken.
The walnuts are extremely important. They should be fresh, young walnuts. And plenty of them β lots and lots!
Do you know how to tell exactly when the chicken is cooked **without touching it**?
No?
I'll share that secret with you at the workshop.

Once I asked my Georgian husband to check whether the chicken was ready.
"Honey, could you check the chicken?"
(I meant, is it cooked or not?)
Very slowly, like a weightlifter preparing to lift a barbell, he walked over to the stove, lifted the lid... very slowly...
Then he looked at me and said,
"Well... I looked."πππ
So yes, apparently you *can* look at a chicken and know whether it's ready! But I'll only show you how when you come to the workshop.

# π Georgian Satsivi
# # π You'll need:
β’ Chicken (up to 2 kg)
β’ 500 g walnuts
β’ Onion
β’ Garlic
β’ Salt, to taste
β’ Ground coriander
β’ Sweet paprika
β’ Utskho suneli (blue fenugreek β not to be confused with regular fenugreek)
β’ Imeretian saffron (yellow marigold petals)
β’ Cinnamon (optional)
β’ 1 tablespoon white or light w**e vinegar
π©βπ³ Method
1οΈβ£ Cook the chicken
Place the chicken into boiling water.
Bring back to the boil, reduce the heat, and simmer for 1β1Β½ hours.
The chicken should be tender but not falling apart.
Do you know how to tell exactly when the chicken is cooked without touching it? If not, I'll reveal that secret at the workshop.
Keep the stock.
2οΈβ£ Roast the chicken
Remove the chicken from the stock and cut it into serving pieces.
Place on a baking tray lined with baking paper and roast until lightly golden.
3οΈβ£ Cook the onion
Carefully skim the chicken fat from the top of the stock.
Cook the finely chopped onion in this fat until soft and sweet, without browning.
4οΈβ£ Make the walnut sauce
Blend together:
β’ walnuts
β’ the cooked onion with the chicken fat
β’ garlic
β’ ground coriander
β’ paprika
β’ utskho suneli
β’ Imeretian saffron
β’ salt
β’ cinnamon (optional)
Blend until smooth and creamy.
5οΈβ£ Bring everything together
Add to the simmering chicken stock:
β’ the roasted chicken
β’ the walnut mixture
Cook gently for 5β7 minutes, stirring carefully.
6οΈβ£ Finish
Add 1 tablespoon of white or light w**e vinegar.
Bring just to the boil, then turn off the heat

Why Georgia Has the Best Cuisine in the World
One of the reasons people drop everything and rush to Georgia is, of course, the food.
What can I say: shashlik and lobio, pkhali and jonjoli, hot peppers and kharcho, khachapuri and churchkhela... A country where people cook delicious food turns eating into a religion. In Georgia, everything is taken seriously. And everything is delicious.
*"Everything we have is unbelievably delicious"* is a feeling that completely surrounds you β Georgians embrace it with passion.
Take khachapuri, for example. Well, it's just flatbread with cheese. Four hundred and fourteen variations of flatbread with cheese. Ossetian khachapuri, Imeretian khachapuri, Adjarian, Svanetian...
In Svaneti, they will tell you that khachapuri was invented there (there are plenty of cows, and the milk is only used to make cheese). You should order one khachapuri for a group of six people, and even then there's no guarantee you'll finish it. The dough, the flavour, the cheese, and even the amount of cheese will be different every time. Every housewife has dough prepared for khachapuri from the morning, and if β what happiness! β twenty guests happen to drop by unexpectedly, she's always ready. The flatbread is usually about forty centimetres in diameter, and the melted cheese will be dripping, hot and juicy, while you take a bite and sigh with pleasure. It's incredibly delicious.
Secondly, kubdari. This is Svanetian khachapuri with meat. Lots of meat, with herbs. The meat is peppery and spicy.
Then there is traditional Georgian bread β diamond-shaped flatbreads, similar to those baked in tandoor ovens.
Cheese. There are many kinds: suluguni, smoked suluguni, fried suluguni, soft fresh Imeretian cheese, cheese with herbs, garlic, or pepper. Sheep's cheese. Sharp sheep's cheese similar to Spanish varieties. Aged cow's cheese, dry and dark...
At our workshop, you will make and enjoy two kinds of khachapuri. It will be an unforgettable taste β I guarantee it.
