Soft Sweet Potato Cinnamon Sugar Donuts

1 cup Mashed Sweet Potato
2 cups All-Purpose Flour
1/2 cup Granulated Sugar
2 teaspoons Baking Powder
1 1/2 teaspoons Ground Cinnamon
1/4 teaspoon Ground Nutmeg
1/2 cup Milk
1/4 cup Melted Butter
1 large Egg
1 teaspoon Vanilla Extract
1/2 cup sugar + 1 tbsp cinnamon Cinnamon Sugar Coating

Preheat your oven to 350Β°F (175Β°C) and grease a donut pan. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and nutmeg. In a separate medium bowl, combine the mashed sweet potato, milk, melted butter, egg, and vanilla extract until smooth. Fold the wet ingredients into the dry ingredients until just combined. Spoon or pipe the batter into the donut cavities, filling them about 3/4 full. Bake for 12-15 minutes or until the donuts spring back when touched. While warm, brush the donuts with a little extra melted butter and toss them in the cinnamon sugar mixture until fully coated.

Zesty Blueberry Lemon Bliss Bars

1 cup Unsalted butter, softened
1.5 cups Granulated sugar
4 Large eggs
1/2 cup Fresh lemon juice
2 tbsp Lemon zest
1.5 cups Fresh blueberries
2 tbsp Powdered sugar for dusting
1/4 tsp Salt

Preheat your oven to 350Β°F (175Β°C) and line an 8x8-inch baking pan with parchment paper. In a medium bowl, combine 1.5 cups of flour, 1/2 cup of sugar, and the softened butter to create a crumbly dough. Press this mixture firmly into the bottom of the pan and bake for 20 minutes until slightly golden. While the crust is baking, whisk together the eggs, remaining 1 cup of sugar, remaining 1/2 cup of flour, lemon juice, and lemon zest until smooth. Gently fold in the fresh blueberries. Pour the lemon mixture over the hot pre-baked crust. Return to the oven and bake for an additional 25-30 minutes until the filling is set. Allow the bars to cool completely at room temperature before refrigerating for at least 2 hours. Dust with powdered sugar and slice into squares before serving.

Mary Berry's Classic Rhubarb & Ginger Crumble

700g Fresh rhubarb stalks, chopped into 1-inch segments
100g Caster sugar
1 tsp Ground ginger
2 balls Stem ginger in syrup, finely chopped
175g Plain flour
100g Unsalted butter, chilled and cubed
50g Demerara sugar
50g Rolled oats
For serving Clotted cream or vanilla ice cream

1. Preheat your oven to 190Β°C (170Β°C fan/Gas Mark 5). 2. Spread the chopped rhubarb pieces into the base of a 1.5-litre ovenproof baking dish. 3. Sprinkle the caster sugar, ground ginger, and chopped stem ginger over the rhubarb, tossing gently to coat. 4. In a large bowl, rub the chilled butter cubes into the plain flour using your fingertips until the mixture resembles coarse breadcrumbs. 5. Stir in the demerara sugar and rolled oats to the crumble mixture to ensure a rustic, crunchy texture. 6. Spread the crumble topping evenly over the rhubarb layer, pressing down very lightly. 7. Bake for 35 to 40 minutes until the rhubarb is tender and syrupy, and the topping has turned a deep golden-brown. 8. For the crust, cream together 1 cup of butter, 1/2 cup of sugar, and 2 cups of flour with a pinch of salt until crumbly. Press the mixture firmly into the bottom of the pan and bake for 20 minutes until the edges are just turning golden brown. For the filling, whisk together the remaining 1 1/2 cups of sugar and 1/4 cup of flour in a bowl. Add the eggs, lemon juice, and zest, whisking until the mixture is smooth and slightly frothy. 1. Sift the almond flour and 130g powdered sugar together twice to ensure a smooth shell. 2. In a clean bowl, whisk egg whites until soft peaks form, then gradually add granulated sugar until stiff, glossy peaks form. 3. Divide the meringue into two bowls. Fold pink coloring into one and yellow into the other. 4. Gently fold half of the flour mixture into each meringue bowl using the macaronage technique until the batter flows like slow-moving lava. 5. Pipe 1-inch rounds onto parchment-lined baking sheets. Tap the trays firmly to release air bubbles. 6. Let the shells rest at room temperature for 45-60 minutes until a dry skin forms on top. 7. 1 tablespoon Vanilla Extract
1/2 cup, plus sprigs for garnish Fresh Mint Leaves
2 tablespoons Granulated Sugar

1. In a medium bowl, toss the sliced strawberries with 2 tablespoons of granulated sugar and 1 tablespoon of finely chopped mint. Let macerate for 15 minutes until juicy. 2. In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. 3. In a clear glass trifle bowl, begin the first layer by placing half of the sponge cake cubes at the bottom. 4.
