The chanterelles are back. 🍄
Paired with veal glaze reduction, Madeira, red wine, garlic and shallots — a rich, savoury sauce that brings out the earthy character of the chanterelles.
Best enjoyed with a glass of Pinot Noir from Domaine Fournier Père et Fils.

If you haven’t tried the duck in a red wine sauce with veal glacé, vermouth and raspberry at the French restaurant Fleur de Sel (2015 4th St SW, Calgary) yet — you absolutely must! 🦆🍷
It pairs perfectly with a glass of red wine, fresh vegetables, and potatoes baked in duck fat and rosemary. 🥔✨
