A great espresso shot is the culmination of many factors working in tandem:
Your coffee, grind size, dose, temperature, recipe, and yes, puck prep.
The goal here is simple: Create an even coffee bed for optimal extraction. A more uniform puck gives water a better chance of moving through the coffee evenly, helping you achieve more consistency from shot to shot.
The best puck prep routine is the one you follow consistently and that helps you make espresso you love. Experiment with your process, pay attention to what’s happening in the cup, and adjust from there.

The perfect end-of-summer iced coffee, with a citrusy twist.
Recently, we welcomed Tanat to our roaster lineup, and we’ve been having some fun exploring their coffees beyond our usual brews.
We used Tanat’s Hacienda La Papaya Typical Natural, a natural-process coffee from Ecuador, and crafted an Orange Iced Coffee: Bright, refreshing, and easy to make at home.
For the iced version, we used a 1:11 ratio for a more concentrated brew that balances the melting ice, brewing it with the xBloom directly over a couple of ice cubes. Then we added orange to play off the coffee’s pink grapefruit notes.

Our final regional stop: Regina!
Meet The Everyday Kitchen, the grand finale on our tour of this year's Canadian AeroPress Championship regionals.
On September 19 at 6:00 PM, they’ll host Regina`s first-ever AeroPress Regional Qualifier, where local baristas will compete for the opportunity to represent the province at the National Final.
Known for thoughtfully made coffee, sourdough doughnuts, and a welcoming community atmosphere, The Everyday Kitchen is a fitting place to bring Saskatchewan’s AeroPress community together.
The team is no stranger to the competition scene: As hosts of the 2022 Canadian National Brewers Cup, they demonstrated a true devotion to community and craft, perhaps outmatched only by their penchant for hospitality.
After this last regional event, all nine qualifying champions will travel to Calgary to compete in the Finals at Eight Ounce HQ on October 17.

Well, now that the dust has settled, we would like to thank everyone who made this year’s AeroPress event so successful. As we have so many people to thank, we will be breaking this down into two posts!
Post #1: The event organizers and the judges
Starting with the Big Dawgs themselves, our friends at Eight Ounce Coffee. Shout-out to Bjorn, and thank you for the opportunity to host. We are very grateful that Josh graced the mic and MC’d the event for us.
We would like to thank all of our judges for travelling to the event and sitting in the hot seat. We realize this isn’t an easy task, and we really appreciate you taking on the challenge.
This year’s judges were emily - pretty sure you know which Emily we’re talking about! Bailey, the co-owner of Anarchy Coffee Roasters and founder of Okanagan Coffee Festival, and the one and only Henryk, our resident judge, the owner, green buyer, and roaster behind neon in Kelowna.
We would also like to say a very special thank you to Lemmie Green for roasting the coffee for the event, sharing his roasting facility, known as Lemmie Land, and also spinning tunes for the event.
