Every mooncake flavour is developed by our chefs from scratch. More rounds of testing than we’d like to admit, working through the texture, the ratio, the baking and the cooking, until it’s exactly right.

The ingredients are part of that equation: pistachio paste from Sicily, hazelnut paste from Cacao Barry, flour from Japan. What goes in is what makes the difference between a mooncake that’s good and one that’s genuinely hard to put down.
