The butternut squash is almost ready to harvest. We are taking pre orders for it.
We grow heirloom Waltman butternut.
The squash is sweet and delicious.

I’ll be posting recipes for using the squash once I’m done outside harvesting.

Eat your root vegetables. Spend a few dollars to make yourself a tray of roasted vegetables.
It’s easy
Purchase root vegetables from the produce markdown.
Look for carrots, parsnips, onions, potatoes.
Think $1.00 per person

Cook them like this
Wash them well. Then cut them into chunks.
Spread them in a single layer on a cookie sheet.
Drizzle with 1 tablespoon of oil
Sprinkle on a herb, basil or oregano.
Bake at 450F for 25 minutes
Remove from oven
Drizzle with 1 tablespoon of vinegar.
Balsamic is best but any vinager will do.

Serve up hot with a side of meat, bread or rice.

Meal 2
Put all the leftovers into a soup pot
Pour in some broth to cover left overs
Bring to a boil
Simmer 20 minutes.
Serve hot with crackers or bread.
