MEZCAL MONDAY HOUSE SPOTLIGHT — KOCH
Koch is a house built around the idea that mezcal should reflect agave, place and producer, not just smoke.
Founded by Carlos Moreno, whose family history with mezcal stretches back generations, Koch now works with more than 50 producing families across 18 communities in Oaxaca. Their range spans Espadín, Barril, Arroqueño, Tepeztate, Mexicano, and more, with both artisanal and ancestral production styles represented.
That means the house style is less about one flavour profile and more about showing the diversity of Oaxaca—floral and mineral in one bottle, earthy and herbal in the next, with each expression shaped by the agave, village and mezcalero behind it.
A lineup made for tasting side by side.
25% off singles and doubles every Mezcal Monday.

BOTELLA DE REVOLUCIÓN — 5 SENTIDOS TOBALÁ / JABALÍ
This month’s bottle is a proper mezcal geek-out.
5 Sentidos Tobalá / Jabalí brings together two wildly expressive agaves in one small-batch bottling—Tobalá bringing perfume, fruit and finesse, while Jabalí adds structure, intensity and that unmistakably untamed edge.
Expect layers of tropical fruit, florals, earth, minerality and spice, all wrapped up in a mezcal that keeps changing in the glass.
Complex, rare and exactly what Botella de Revolución is about.
Available by the ounce while it lasts.

CHEF’S FEATURE TONIGHT — AGUACHILE NEGRO
Rockfish and prawn ceviche with pickled onion, serrano, lime, cucumber, avocado and cilantro, finished with crispy corn tortilla strips and served with tortilla chips on the side.
Bright, spicy, fresh and built for a margarita.

This month’s Botella de Revolución is Flor del Desierto Veneno.
Not tequila. Not mezcal. Sotol.
Made from wild desert spoon in Chihuahua, Veneno is earthy, herbal, peppery, mineral, and a little dangerous around the edges.
And yes — the name means poison.
A rare northern Mexican spirit with a wild backstory and a serious sense of place.
Available by the ounce while the bottle lasts.

Happy Canada Day 🇨🇦
This month’s Botella de Revolución is Caballito Cerrero Azul Reposado 46.
When is a tequila not a tequila? When a family whose story predates the GI decides to keep doing things their own way.
Raw, honest, agave-first, and proudly outside the lines.
Available by the ounce while the bottle lasts.

Botella de Revolución this month is the delicious Tobalá.
A beautiful, hard-to-get little number with serious character. If you’ve been looking for an excuse to dive a little deeper into mezcal, this is it.
