While Madagascar Vanilla is the global standard for general baking, Mexican vanilla extract is highly prized by chefs because it holds its flavour exceptionally well under high heat. the deep, spicy undertones do not bake out in the oven. it pairs perfectly with heavy, rich dishes like chocolate desserts, custards, warm spices and traditional Mexican Hot Chocolate!
