A classic everyone loves – sausages, creamy Mash Direct Champ and a rich homemade red onion gravy. The best part? The gravy is really the only bit you have to worry about! 🙌

Save this one for your next cosy night in… and enjoy with a glass or two of the leftover red w**e 🍷👇

Ingredients (Serves 4)
* 2 x packs Mash Direct Champ
* 8 sausages (we used pork & onion, but use your favourite!)
* 2 red onions, thinly sliced
* 1 tbsp olive oil
* 2 tbsp caster sugar
* 2 tbsp balsamic vinegar
* Fresh thyme & rosemary, chopped
* 200ml red w**e
* 500ml beef stock
* 1 tbsp cornflour
* 30g butter
* 2 tsp Worcestershire sauce
* Green veg, to serve

Method 👩‍🍳
1. Cook your sausages according to the pack instructions until golden and cooked through.
2. While the sausages are cooking, heat the olive oil in a large pan over a medium-low heat. Add the sliced red onions and cook gently for 8–10 minutes until soft.
3. Add the caster sugar and balsamic vinegar, stirring well. Cook for another 3–4 minutes until the onions are sticky and caramelised.
4. Stir through the chopped thyme and rosemary, then pour in the red w**e. Bring to a simmer and allow it to reduce for around 5 minutes.
5. Add the beef stock and Worcestershire sauce, then simmer for 10–15 minutes to let all those flavours come together.
6. Mix the cornflour with a splash of cold water to create a smooth paste. Gradually stir it into the gravy and simmer until thickened to your liking.
7. Finish by stirring through the butter for a rich, glossy gravy.
8. Heat your Mash Direct Champ according to the pack instructions, then serve with the sausages, plenty of red onion gravy and your favourite green veg.
