Shelly’s mostly lives online, which can feel a little solitary at times, apart from the lovely email chats and messages with customers. Each box is packed up with love, sent off, and then comes the quiet wait for the A Post notification to say it’s landed safely. Most of the time, I don’t get to witness the joy arrive.

That’s why markets feel so special to me.

One of the biggest surprises of this little business has been the friendships that have grown from it. People who first ordered a treat box have since welcomed me into their kitchens for a cuppa during drop-offs, around their dinner tables with their beautiful family, and one friend who originally ordered a Palestinian treat box I travelled to Syria with last Christmas. 🤍

Mark Valentine’s Day this Saturday with a box of handmade heart-shaped vanilla shortbread, filled with homemade raspberry jam and dusted with icing sugar. These are my favourites, buttery, melt-in-the-mouth and perfectly balanced with a zingy raspberry centre (aka a very fancy homemade Jammy Dodger 😉). Wrapped in a shiny gold gift box, they’re a deliciously thoughtful alternative to flowers or chocolates. I don’t often do wedding cakes but this was for a friends wedding back in August 2025.

With my phone exploding on a ferry in Italy and the Christmas rush, I lost everything on my phone but recently managed to source a photo from a pal!

This was a sponge cake with raspberry and vanilla buttercream and decorated with fresh flowers!

As always with sponges they are super light and the home made raspberry jam balanced the sweetness of the buttercream! It tasted absolutely delicious if I do say so myself! 🧁

Can you recall your first caramel slice? For me, it wasn’t one of the baked items my mum made as the quantities of butter and sugar wouldn’t exactly get her seal of approval! she’s always saying there’s too much sugar in recipes and it can be reduced slightly! But for caramel slices, I think you need to go all in! 💕

For me, I loved the caramel slices when I worked at a bakery as a teenager and I tried to recreate the sweet caramel and the buttery base! What’s your fave part gooey caramel, crumbly shortbread, or chocolatey topping?

I was nominated for the Club Solo Business Female Founder Award back in September, which, between the hecticness, I completely forgot to share! 😄💕

The Club is such a wonderful community of women in business supporting, inspiring, and uplifting each other through every stage of the journey.

It’s hard to believe it’s been almost five years since I sent out the very first Shelly’s boxes during Covid in 2020. Since then, I’ve shipped thousands of boxes, made new friends while also opening doors to new opportunities I didn’t even knew existed!

Although I didn’t make the finalist shortlist, I was absolutely delighted just to be nominated & even more thrilled to cheer on my lovely friend Fiona, who I first met through Acorns last year.

She went on to win the Solo Business Female Founder Award! 🎉 Her business, , is a beautiful brand doing amazing things for sensitive, rosacea prone skin, definitely worth checking out!

It was such a joy meeting both new and familiar faces at the awards night and you leave those events feeling like anything is possible!

In my carrot cake recipe there’s a unique mix of spices, while the zingy orange zest balances the earthiness of irish carrots! Instead of the typical walnut addition I add coconut! in Galway recommended a bakery cookbook once and that’s where I got the recipe! Why don’t you try it as part of the assorted baked gift box! Just remember Shelly’s bakery will be closed until October 1st so get your orders in before 16th September as I’m taking a well deserved break! ⚡️
