🌭 These Korean Corn Dogs are surprisingly easy to make at home. They’re just Dewfresh pork sausage and mozzarella on a stick, battered, breaded and deep fried until golden, finished with a gochujang ketchup (which is amazing on so many other things) and yellow mustard.
🌽 Makes: 8 corn dogs | Serves: 4
◈ INGREDIENTS
◆ 4 Dewfresh pork sausages, halved crosswise
◆ 200g low-moisture mozzarella, cut into 8 batons
◆ 8 wooden skewers or chopsticks
For the batter:
◆ 200g plain flour
◆ 50g fine cornmeal
◆ 2 tsp baking powder
◆ 2 tbsp caster sugar
◆ 1 tsp salt
◆ 2 large eggs
◆ 180ml whole milk
For rolling:
◆ 100g panko breadcrumbs
For the gochujang ketchup
◆ 100g Ketchup
◆ 25g honey
◆ 50g gochujang
◆ Neutral oil for deep frying
⦿ METHOD
① Skewer and freeze: Thread a sausage half and a mozzarella baton onto each skewer. Place on a tray and freeze for at least 30 minutes.
② The sauce: Whisk together gochujang, honey and ketchup until smooth. Taste and adjust. Set aside.
③ The batter: Whisk flour, cornmeal, baking powder, sugar and salt together. Add eggs and milk and mix to a smooth, thick batter.
④ Coat: Dip each frozen skewer into the batter and turn to coat evenly, letting the excess drip off. Roll immediately in panko, pressing it into the sides and ends to seal.
⑤ Fry: Heat oil to 170°C. Fry in batches for 3-4 minutes, turning regularly, until deep golden and crispy. Drain on a wire rack.
⑥ Serve: Drizzle with the gochujang mustard sauce or serve alongside for dipping.
