Two years ago, we opened our doors above Sliema with one intention: to create something truly exceptional.

Six months later, a Michelin star. Two years later, we are still here, still pushing, and still incredibly proud of every single person who makes Le GV what it is every evening.

Meet Viola👨‍🍳, our Chef Tournant, proudly representing Sicily.

If chefs came with instruction manuals, she’d be the first chapter. Calm, practical, ridiculously organised, and she made bandanas cool long before The Bear.

Kitchen porters know her well; let’s just say she has very high standards.

When she’s not cooking meat to perfection or treating fish with the respect it deserves, you’ll find her exactly where every Sicilian should be: on a beach, enjoying a granita. Some stereotypes exist for a reason.

Carlos Darmanin Mifsud | Sous Chef

Born and bred in Qormi. Classically trained at ITS and Edinburgh.

A kitchen machine with a passion for pushing the team forward and keeping spirits high. Off duty? You’ll find him chasing the best street food, talking about BMWs… and somehow finding a way to mention Colombia. 🇨🇴
