Founder Janet Flores brought the whole team home and arranged a visit with one of the masters. Guadalupe at Doña Guille gave us a full masterclass in the granddaddy 30-inch “tortilla de agua” aka “sobaquera.” Hard to express how generous she was with her knowledge — but like most bakers, she knows the only “secret” is practice and caring.

I was a mess, but somehow having my hands in dough feels like home.
