Nyonya cuisine came about as a result of the Chinese immigrants in Malaysia adopting local traditions and tastes as well as through inter-marriage between them and local Malays. are used. This style and taste resulted in a wonderful amalgamation of cuisines that assimilated the local culture and race and which one can truly called Malaysian Nyonya. In these early days Chinese immigrants also adopted local Malay traditions–the men were called Babas and the women were called Nyonya. The Nyonyas were expected to provide the food for the Babas and hours would be spent grinding and pounding spices over stone slabs and pestle and mortar in order to make the main ingredients that makeup the full spectrum of the Nyonya dining experience. In this modern age, commercialisation of food in the pursuit of monetary gain, has resulted in compromises being made in the quality of food served. True Nyonya food is prepared with integrity and with heart and soul. There are no shortcuts to making real Nyonya food. Real Nyonya food is real ‘Comfort Food’. Nyonyas pride themselves in their recipes and skill in cooking and a sure sign that the Nyonya is a fabulous cook is in the evidence of Chubby Babas!
