🍚 Nigerian Party Jollof Rice.

For approximately 15–20 people:
* 5 kg long-grain parboiled rice
* 2–3 litres tomato pepper blend
* 1–1.5 litres vegetable oil
* 1–1.5 kg fresh tomatoes
* 500–700 g red bell peppers (Tatashe)
* 200–300 g Scotch bonnet peppers (Ata rodo), adjust to taste
* 1–2 kg onions
* 200–300 g tomato paste
* 2–3 tablespoons curry powder
* 2–3 tablespoons thyme
* 4–6 seasoning cubes
* Salt to taste
* 2–4 bay leaves
* 1–2 teaspoons white or black pepper
* Meat or chicken stock, as needed
* Water, as needed
* Optional: butter or margarine
* Optional: chicken/meat stock from your party protein
👨🏾‍🍳 Step-by-Step Method
STEP 1 — Prepare your pepper and tomato blend
Wash and roughly chop:
* Tomatoes
* Tatashe
* Scotch bonnet
* Onions
Blend everything together.
Important party Jollof trick: Don’t make the blend too watery. A thick blend gives you better control over the rice and helps produce a richer sauce.

STEP 2 — Boil down the pepper mixture
Pour the blended mixture into a large pot and boil it until much of the water evaporates.
Keep cooking until it becomes thick and concentrated.
This is one of the secrets to avoiding watery Jollof rice.

STEP 3 — Fry your tomato paste
Put your large cooking pot on medium heat.
Add vegetable oil and sliced onions.
Fry the onions for about 2–4 minutes.
Add your tomato paste.
Fry the tomato paste thoroughly for approximately 8–12 minutes, stirring frequently.
You want the raw tomato-paste taste to disappear and the paste to become darker and richer.

STEP 4 — Add your pepper mixture
Pour in your reduced pepper-and-tomato blend.
Be careful because it may splatter.
Stir thoroughly and allow the sauce to fry.
Cook for approximately 15–25 minutes, stirring occasionally.
You want the oil to begin separating from the sauce.

STEP 5 — Season the sauce
Add:
* Curry powder
* Thyme
* Bay leaves
* Seasoning cubes
* Black/white pepper
* Salt
Then add your chicken or meat stock.
Taste the sauce.
At this stage, the sauce should taste slightly stronger and saltier than you want the final rice to taste, because the rice will absorb and dilute the seasoning.

STEP 6 — Wash your rice
Wash your parboiled rice several times until the water becomes considerably clearer.
Drain it properly.
Don’t soak the rice for too long, especially if you’re cooking a large quantity, because you don’t want it becoming too soft before it absorbs the sauce.

STEP 7 — Add the rice
Add the washed rice into your Jollof sauce.
Mix thoroughly so that every grain is coated with the sauce.
Add enough stock/water to cook the rice.
Don’t drown the rice.
The liquid should generally be around the level of the rice, depending on the rice you’re using.

STEP 8 — Cover tightly
This is extremely important for party Jollof.
Cover the pot tightly with:
1. Foil paper
2. Then the pot lid
The trapped steam helps cook the rice evenly.
Reduce the heat to low.
Allow the rice to cook slowly.

STEP 9 — Check the rice
After about 15–20 minutes, check the rice.
Stir gently from the bottom upward.
If the rice is still hard and there isn’t enough moisture, add a small amount of hot stock or water.
Don’t add too much at once.
Cover again and continue cooking.

STEP 10 — Create the smoky party flavour 🔥
When the rice is almost completely cooked, reduce the heat even further.
Allow the bottom of the pot to develop a small amount of toasted/smoky crust.
Don’t constantly stir the rice at this stage.
That slightly burnt layer underneath is part of what gives traditional party Jollof its distinctive smoky aroma.
Don’t deliberately burn the entire pot — you want controlled smokiness, not burnt rice.

STEP 11 — Add butter
When the rice is fully cooked, you can add a small amount of butter or margarine.
Gently fold it through the rice.
Taste and adjust:
* Salt
* Seasoning
* Pepper
Then turn off the heat.
Allow the rice to rest, covered, for 5–10 minutes.

1. Fry your tomato paste properly
Don’t rush this step. Proper frying removes the raw tomato taste and creates depth.
2. Reduce your pepper blend
Watery pepper sauce = watery Jollof.
3. Use good stock
Chicken or beef stock makes a huge difference.
4. Don’t use excessive water
You can always add more liquid. It’s much harder to rescue overcooked, soggy rice.
5. Cook slowly
Low heat allows the rice to absorb the sauce without becoming mushy.
6. Keep the pot covered
Steam is your friend.
7. Let the bottom toast slightly
That’s where you get that authentic smoky party Jollof aroma.
8. Don’t stir constantly
Too much stirring can break the grains and turn the rice mushy.
