Bread making isn’t something we rush around here. Good dough takes time, and we’re more than happy to give it exactly that.

From mixing and shaping to resting, proofing and finally hitting the oven, every step matters. No shortcuts, no speeding things up just for the sake of it.

Just good ingredients, proper technique, plenty of patience, and a whole lot of flour on the floor by the end of it.. 😅

The result? Proper bread, baked fresh every day, just the way it should be.

Say bonjour to Corentin, one of the talented pastry chefs behind the scenes here at Copain.

Born in Toulouse, France, Corentin began his career in the culinary world before discovering where his real passion lay - pastry. From there, he dedicated himself to learning the craft, developing his skills and, eventually, deciding to take them halfway across the world.

New Zealand had always been somewhere Corentin dreamed of experiencing. A chance to share his French pastry knowledge, discover a completely different culture, and see what life on this side of the world had to offer.

And, if we’re being fair, the rugby probably helped. 🏉

Growing up in Toulouse, a city with rugby well and truly in its blood, Corentin has always been a big fan of the game. So getting to call New Zealand home, where rugby is practically a second language, is a pretty good deal.

These days, you’ll find him in the Copain kitchen, bringing a little bit of Toulouse to Ponsonby, one pastry at a time 🤍

There’s a new favourite in the pastry cabinet and it’s basically winter in pastry form.

Our new apple pastry is filled with caramelised apple, honey, and cinnamon, all wrapped up in buttery, flaky pastry.
