The dish Papa cooks when he's missing Bebe.

My Bebe — my grandmother — passed away a few years ago. Papa (her son, my father) still cooks her recipes every day at Bebe's Spice Box. He's been the cook since we opened in 2022. He'll be the cook tomorrow too.

But this one — the beef and potato curry — is the dish he makes on his quiet days. The days when he's not talking much. The days when he's just cooking.

I asked him once why he makes this one on slow days. He said: "This is what your Bebe made when she didn't feel like cooking but still had to feed us. It was her tired-day dish. Now it's mine."

I didn't ask him anything else after that. Some things you don't push.

So here's what's in the bowl: slow-cooked beef that shreds apart with a wooden spoon. Potatoes that drink the gravy whole. Whole spices — cardamom, cinnamon, dried red chili — that Bebe used to keep in a tin older than me.

Pour it over white rice (₱29) or scoop it with paratha (₱34). That's how Papa eats it. That's how Bebe used to eat it. That's how I eat it too, even though I can't cook it.

₱239 for the curry. ₱29 for the rice. ₱268 total — the bowl Papa makes when he's missing his mother.

Bebe is gone. Her recipes are not. Papa still cooks them. I just eat.

I'm the granddaughter. The woman you see in this video, standing in front of the camera, smiling, not cooking — that's me. I want to be honest about that, because I don't want anyone to come to our stall expecting me to cook for them. I can't.

My Bebe — my grandmother — passed away. Before she passed, she taught my father every recipe she knew. Every curry. Every biryani. Every lassi ratio. Every spice blend. She taught him in her kitchen in Punjab, with her hands over his hands, the way her Bebe taught her.

My father has been the cook at Bebe's Spice Box since we opened in 2022. He's the cook you see in the background of this video, stirring the pot. He's been cooking these recipes since before I was born. He'll be the cook tomorrow too.

I'm here to tell you about Bebe's cooking because Papa doesn't like to talk. He just cooks. So I talk.

Good food. Good mood. That's what Bebe used to say when she was still with us. Papa still says it — quietly, to himself, every morning before the stall opens. Every plate that leaves our counter carries her handwriting, even if I can't read half of it.

This is my Bebe's kitchen in 1987 (Our Kitchen). I still use a similar pot. Similar spoon. Same recipe.

When my mother passed, I got the recipe book shipped to me.
I opened the box in Santa Rosa, read the recipe book and relived memories, and cooked my first batch of biryani
the next morning.

Everything at Bebe's Spice Box is cooked in similar pot. Every curry. Every biryani. Every spoonful of Yogurt.

When the stall closes at 11 PM, when we are tired we serves ourself one bowl of beef curry with potatoes over
white rice.
We been doing this for years — at our stall in Santa Rosa. It's the only thing we eats standing up.

Slow-cooked beef that shreds with a wooden spoon. Potatoes that drink the gravy whole. Pour it over rice —
that's the move she taught me when I was seven.

₱239 for the curry. ₱29 for the yellow rice. ₱268 total for the bowl Bebe eats herself.

This is the value curry on the menu. It's also our favorite dish we serve. Most people order the chicken
biryani or tikka masala — those are great — but if you want to eat what the cook eats when we thinks no one's
looking, this is the order.

If you've never eaten at Bebe's Spice Box, this is your week.

Here are the 5 dishes I'd start with, in order from mildest to boldest:

1. 🍛 Chicken Biryani — The entry point. Slow-cooked in the same copper pot my Bebe used in 1987. Saffron rice, marinated chicken, fried onions. This is what most people order first and never look back.

2. 🌯 Beef Kathi — Handheld street food. Spiced beef rolled tight in fresh paratha. Not too spicy. Eat it on the go.

3. 🥟 Pani Poori — 12 pieces. Crispy shells filled with mint water, chickpeas, tamarind. One bite each — don't nibble. (Reel drops Tuesday.)

4. 🍲 Chicken Tikka Masala — The classic. But this one is the real Punjabi version — not the Glasgow-1971 invention. (Reel drops Wednesday explaining the difference.)

5. 🥭 Mango Lassi — The cool-down. Bebe said yogurt cools the spice. Trust her.

Three Bebes. One biryani recipe. Zero of it written down.

My mother taught me to marinate the chicken before I could read. Her mother taught her. Her mother's mother taught her.

This is Chicken Biryani the way my family has made it for 4 generations in Punjab. Slow-cooked in a sealed pot. Never rushed. Never written down — until now.

I'm the first one in my family to write any of this down, so it doesn't disappear when I forget.
