The Aviation Cocktail is one of those timeless drinks that feels both vintage and effortlessly modern at the same time. It’s part of the early 20th-century “golden era” of cocktails, known for its elegant balance, pale color, and floral character.
At its core, the Aviation is made with gin, fresh lemon juice, maraschino liqueur, and crème de violette. That last ingredient is what gives it its signature soft lavender-blue hue; almost like a sky at dusk, which is where the cocktail gets its name. The result is silky, slightly tart, lightly sweet, with a gentle floral finish that lingers rather than overwhelms.
Historically, it first appeared in the early 1900s and is credited to bartender Hugo Ensslin, who published one of the earliest known versions in his 1916 cocktail book. Like many pre-Prohibition cocktails, it disappeared for decades when crème de violette became hard to find, and was only revived in the modern craft cocktail movement when bartenders began rediscovering forgotten liqueurs and recipes.
What makes the Aviation special isn’t complexity; it’s precision. When balanced correctly, it tastes like something airy and architectural: delicate, but intentional.

In May, we explored the fascinating world of Japanese whiskey through a tasting featuring three distinctive expressions: Akashi, Tenjaku, and Hatozaki.
🥃 Akashi is produced by the historic White Oak Distillery in Hyogo Prefecture, one of Japan’s oldest licensed distilleries. While the company has been making sake and shochu since the late 1800s, it began crafting whiskey in the early 20th century, creating spirits known for their balance, elegance, and subtle complexity.
🥃 Tenjaku, named after the skylark bird, is inspired by the natural beauty surrounding Mount Fuji. Produced in Yamanashi Prefecture, this whiskey reflects the Japanese philosophy of harmony, offering a smooth and approachable profile that highlights precision and craftsmanship.
🥃 Hatozaki takes its name from Japan’s oldest stone lighthouse, a symbol of guidance and tradition. Crafted by the Kaikyo Distillery in Akashi City, it honors the region’s maritime heritage while delivering a refined whiskey that bridges Japanese tradition and modern innovation.
Together, these expressions showcased the artistry, dedication, and attention to detail that have earned Japanese whiskey worldwide recognition. It was an evening filled with discovery, appreciation, and a deeper understanding of one of the world’s most celebrated whiskey traditions.

The Sidecar is one of the great classic cocktails of the early 20th century, believed to have been created in either Paris or London shortly after World War I. Its name is often linked to a military officer who reportedly arrived at a bar in the sidecar of a motorcycle.
Made with cognac, orange liqueur, and fresh lemon juice, the Sidecar became famous for its perfect balance of richness, citrus, and elegance. It remains a timeless cocktail; simple in ingredients, yet sophisticated in character.

Traditionally made with whiskey, sugar, bitters, and a citrus peel, the Old Fashioned has remained a timeless classic for over two centuries. Its simplicity allows the spirit to shine, making it a favorite among whiskey enthusiasts and cocktail purists alike.
