For many people in Sài Gòb, alongside Phở and Bún Bò Huế, Hủ Tiếu Nam Vang is such a familiar dish that simply hearing its name is enough to bring back memories of home.
It carries the flavor of ordinary mornings in Saigon.
A steaming bowl of noodles on the table.
A small plate of greens placed beside it.
The sound of traffic flowing through the streets.
People coming and going.
And for those few brief minutes, all the rush seems to fade away. There is only the rising steam, the fragrant noodles lifted by chopsticks, and a deeply familiar sense of peace.
Perhaps that is what I miss the most.
A bowl of Hủ Tiếu Nam Vang is a harmony of countless layers of flavor. The noodles are thin, soft, and pleasantly chewy the broth is clear, delicate, and naturally sweet. The sweetness of shrimp, tender slices of pork, the rich, earthy taste of pork liver and minced meat, finished with the freshness of herbs everything comes together in one simple yet generous and complete bowl.
If the soup version feels light and comforting, dry Hủ Tiếu Nam Vang offers a richer experience. Each strand of noodles is evenly coated in a slightly sweet, savory sauce that soaks deep into every bite. Beside it comes a bowl of steaming broth, which can be poured over the noodles or enjoyed slowly on its own.

Hủ Tiếu Nam Vang originated in Phnom Penh, Cambodia. “Nam Vang” is the old Vietnamese name for Phnom Penh. Over generations, the dish crossed borders and found its own place in the culinary culture and everyday life of Saigon.
From a dish that came from afar, Hủ Tiếu Nam Vang gradually became part of the city’s memories connected to hurried mornings, familiar eateries, steaming bowls of noodles, and the comforting feeling of coming home.

This photo was taken back in 2015 with Iphone 4, when I was still in Sài Gòn aka Ho Chi Minh City, standing in the kitchen and cooking a bowl of Hủ Tiếu Nam Vang with my own hands at my uncle’s hủ tiếu restaurant.
Back then, I never thought that more than 10 years later, I would be here in Wisconsin, getting ready to cook that same dish for people in Appleton and the Fox Valley. ❤️🇻🇳🇺🇸
For many people from Ho Chi Minh City, besides Phở and Bún Bò Huế, Hủ Tiếu Nam Vang is another dish that feels very close to home.
A bowl of Hủ Tiếu Nam Vang is all about layers.
Hủ Tiếu is skinny rice noodle, a bit more chewy than regular vermicelli.
The broth is light, clear, naturally sweet and comforting. You get the sweetness of shrimp, the tenderness of sliced pork, the richness of pork liver and ground pork, the freshness of herbs, and that soft, slightly chewy bite of the noodles all coming together in one bowl.
And if you have it khô, it becomes a completely different experience. The noodles are tossed in a savory, slightly sweet sauce that coats every strand with flavor, while a hot bowl of broth is served on the side.
It is savory, a little sweet, fresh, comforting, and full of different textures in every bite.
But for me, Hủ Tiếu Nam Vang is more than just a bowl of noodles.
It tastes like an ordinary morning in Ho Chi Minh City.
A hot bowl on the table.
A little plate of herbs on the side.
The sound of the street outside.
People coming and going.
And for a few minutes, nothing else really matters.
That feeling is probably what I miss the most.
The dish traces its roots back to Phnom Penh, Cambodia. “Nam Vang” is the traditional Vietnamese name for Phnom Penh, and over generations, Hủ Tiếu Nam Vang became deeply connected to the food culture and everyday life of Ho Chi Minh City.
Looking at this old photo now feels a little emotional for me.
In 2015, I was simply standing in a small restaurant in District 5, Ho Chi Minh City, cooking a bowl of hủ tiếu.
In 2026, somehow that same bowl followed me all the way to Appleton, Wisconsin.
Life can take you very far from where you started. But sometimes, the food you grew up with has a way of bringing you right back home.
And tomorrow, I finally get to cook this one for you. ❤️

This week, there’s one dish I’m especially excited to share with everyone. Hủ Tiếu Nam Vang. ❤️
If you grew up in Sài Gòn, you probably already know how special this bowl is.
💡Hủ Tiếu Nam Vang, literally Phnom Penh noodles, has roots in Cambodia, but over generations it became one of the most beloved noodle dishes in Sài Gòn. Sài Gòn made it its own, with both the comforting soup version and the flavorful dry version served with broth on the side.
💡Hủ Tiếu Nam Vang is one of those dishes that became part of everyday Sài Gòn life. You can find it in little street stalls, neighborhood restaurants, early in the morning, late at night, or whenever you just want something warm and comforting.
☺️For so many Sài Gòn people, it is more than just noodles. It is one of those familiar flavors we grew up with. ❤️
💡And one of my favorite things about Hủ Tiếu Nam Vang is that you can enjoy it two different ways.
👉🏻🍜 Hủ Tiếu Nước
Served with a clear, savory broth, noodles, fresh herbs and all the toppings together in one comforting bowl.
👉🏻🥢 Hủ Tiếu Khô
The noodles are tossed with sauce and toppings, with the hot broth served separately on the side. You mix everything together yourself, take a bite, then a sip of broth. Completely different experience, but just as good.
Some people are team nước.
Some people will always choose khô. ❤️
For me, both remind me of Sài Gòn.

Somehow, Sài Gòn Found Me Again in Madison❤️🇻🇳
I was in Madison and came across this little Vietnamese bánh mì trailer. The second I saw it, I smiled because it reminded me so much of where I came from.
I started talking with the owner and found out he is also from Sài Gòn. Then somehow the world got even smaller when I learned he is from the Quận 5 area too, the same area where I used to live.
I don’t know how to explain it, but meeting another Sài Gòn person here in Wisconsin just feels different. You talk for a few minutes and somehow it already feels familiar. ❤️
Seeing his trailer also meant a lot to me because I started in a very similar way. Before Rô Càphê became what it is today, I also started from a small trailer serving bánh mì and Vietnamese coffee.
So when I stood there looking at his setup, I understood the long days, the preparation, the uncertainty, and how much heart goes into keeping a small business going.
Before I left, he found out I came from pretty far away, so he gave me a cup of cà phê sữa đá for the road.
Just a small cup of coffee, but it meant a lot to me.
Very Sài Gòn. Very Vietnamese. Just a little something from the heart. We would say, “uống lấy thảo.” ❤️☕️
That moment reminded me again why I believe small businesses should support small businesses whenever we can. Sometimes one bánh mì, one coffee, one kind word, or simply sharing someone’s business can mean more than people realize.
So if you are ever in Madison, please stop by, say hello, grab a bánh mì or a coffee, and show him some love. ❤️
