We are a USDA inspected (TA) meat processing facility, lab, and retail store open every Friday 10:00
The Meat Science and Technology Center (MSTC), located in the Animal and Dairy Science Department at the University of Georgia, is a fully functional meat animal processing facility that is federally (USDA) inspected (est. # 7421A) to ensure that all animals are treated with their welfare in mind and to ensure the wholesomeness of the meat products that are produced. The main purpose of the MSTC is to facilitate teaching, outreach and research education in the areas of meat animal production, meat science, and muscle biology. The MSTC is an invaluable tool to help educate and train students and the public that have an interest in working in a field that feeds millions of people every day. The ongoing work at the MSTC strives to serve the needs of the citizens of Georgia, the United States and the World. Although the main purpose of the MSTC is to provide a facility for education, outreach, and research, we are able to sell the meat that is produced because it is inspected for wholesomeness by the USDA. The weekly meat sales also provide an excellent environment for our students to learn about meat market merchandizing, food safety, and public relations. The income from meat sales goes directly back to the department of Animal and Dairy Sciences to facilitate the continued hands on education of our students. Meat sales are open to the public every Friday 10:00-4:30 pm.

We made a fresh batch of Philly Cheesesteak and Jalapeño Cheddar Smoked Sausages!
If you are interested in purchasing a whole sheep carcass and getting it processed, we will have some available for $8.50/lb on the carcass weight. The average carcass is around 80lbs. This price includes the cost of the carcass and processing. Customers can expect a 70% yield of bone-in cuts. We have fresh pork and beef cuts in the refrigerator case! We also have lamb offal(heart, liver, kidney). Lamb cuts will be available next week.

We are so glad to finally be back and open to the public! We have worked diligently the last two weeks to prepare as much product as we can!
The refrigerator case is full of fresh beef and pork! Check out our Korean BBQ marinated Flanken Short Ribs. We also have a wide assortment of smoked and cured goods, including bacon(s)! Our sausage dogs are back in three varieties, Original, Country(breakfast), and Philly Cheesesteak!
