π₯π What a Weekend at Lil' Rascal's BBQ! ππ₯
First and foremost... THANK YOU!
This weekend was another great one for the Lil' Rascal's family, and we couldn't do it without all of your support.
Friday's smoke session included three racks of ribs: π Hickory (Meat Church) π Holy Cow (Meat Church) π Hail Mary (Meat Church).
And tomorrow we'll be sending out another three racks: ππ Two Holy Cow π One of our Signature Black Cherry Sweet Twist.
We truly appreciate every order that's placed with us. Every message, every recommendation, and every customer gives us another opportunity to do what we love.
Of course... we couldn't help ourselves from sneaking in a few experiments this weekend too. ππ₯
As soon as Meat Church announced their brand-new Garlic & JalapeΓ±o Blanco seasoning, we knew we had to get our hands on it.
So naturally...
π₯ We seasoned a rack of ribs with it.
π We also made Meat Church's Garlic Parmesan Smoked Wings recipe featuring the new seasoning.
And all we can say is...
WOW.
The Garlic & JalapeΓ±o Blanco delivers everything we already loved about Blanco with an extra punch of roasted garlic and just enough jalapeΓ±o to wake up your taste buds without overpowering the food. It's bold, savory, incredibly balanced, and might have just earned a permanent spot in our seasoning lineup.
The ribs were fantastic.
The wings...
Let's just say they disappeared a whole lot faster than they took to cook. π
We've included a few pictures from this weekend's experiments, and we think they speak for themselves.
Thank y'all again for supporting our family's little BBQ adventure. We can't wait to fire up the smoker again soon and keep bringing y'all new flavors to enjoy.

π₯π Who's Hungry? The Smoker's Firing Up This Friday! ππ₯
We've got one rack of ribs heading to the smoker this Friday, seasoned with Meat Church Hickory for one of our awesome customers... and that means we've got plenty of room left on the pit! ππ₯
Why let all that smoke go to waste?
If you've been thinking about trying Lil' Rascal's BBQ, this weekend is a great time to jump in!
We've got room for:
π Pork Ribs
π Smoked Salmon Bites
π₯ Pork Belly Burnt Ends
π― Bacon-Wrapped Honey Buns
π₯© Brisket (based on demand)
Have something else in mind? Just send us a message! We're always happy to talk through custom orders and special requests.
As always, everything is smoked fresh, made to order, and cooked low and slow with the same care we'd put into feeding our own family.
If you'd like to get on this weekend's smoke schedule, shoot us a Facebook message before the smoker fills up!
Thank y'all for continuing to support our little family business. Every order helps keep the smoke rolling, and we truly appreciate each and every one of you.

πΊπΈπ The Lil' Rascal's Family Checking In! ππΊπΈ
Well... we looked up and realized it's been over a month since we've made a post!
Life has a funny way of speeding up sometimes. Between work, family, and everything else that comes with day-to-day life, our social media took a bit of a back seat through June.
The good news is... the smoker never stopped rolling. π₯
We've still been filling orders, trying new recipes, experimenting with different cuts of meat, and spending weekends doing what we loveβmaking BBQ for friends, family, and our customers.
We just haven't done the best job of sharing it with y'all!
So we figured we'd jump back in with a picture of the crew behind Lil' Rascal's BBQ, decked out in our red, white, and blue from the Fourth of July. πΊπΈ
This little business has always been about more than just barbecue. It's about spending time together as a family, learning new things, meeting great people, and sharing food that brings folks around the table.
As we head into the second half of the year, we've got some big goals.
π₯ We'd love to grow Lil' Rascal's BBQ into a bigger part of our family's life. π₯ Reach more people here in Athens and the surrounding communities. π₯ Keep adding new menu items, trying new ideas, and serving BBQ we're proud to put our name on.
If you've ordered from us before, shared one of our posts, recommended us to a friend, or simply followed along on this journey...
Thank you.
Your support means more than you know, and it's the reason we're excited about what's ahead.
If you've been thinking about placing an order, send us a message! We'd love the opportunity to cook for your next family dinner, get-together, or special occasion.
We're back... and we've got plenty of smoke left to roll. ππ₯

π₯©π₯ Brisket Experiment Complete π₯π₯©
The brisket experiment is officially in the books... and we'd call this one a success. ππ₯
This weekend we separated the point from the flat and smoked them independently to see how everything would turn out.
The results?
π€€ Absolutely worth it.
The flat finished beautifully. It was a little strange slicing pieces that small compared to a traditional whole-packer brisket cook, but they turned out exactly how they were supposed to. Tender, juicy, and packed with that classic brisket flavor. Even the small piece that had to be trimmed off extra ended up being some mighty fine eating.
And then there were the burnt ends...
π₯ Sticky.
π₯ Smoky.
π₯ Messy.
π₯ Loaded with flavor.
They may not be the prettiest things we've ever made, but they more than made up for it in taste. Sometimes the ugliest BBQ is the best BBQ, and these little flavor bombs definitely fit that description.
From trimming and seasoning, to rendering down tallow, to tending the smoker all day, it was a long cook from start to finish. But that's just part of the deal.
Good BBQ takes time.
And when you finally get to slice into a brisket that's been on your mind all day, every minute of waiting feels worth it.
Thank y'all for following along with our little brisket experiment this weekend. We love sharing these cooks with y'all, and we're already thinking about what we'll throw on the smoker next.

π₯©π₯ Brisket Experiment Update #2 π₯π₯©
We're officially on the final stretch of today's brisket experiment ππ₯
The brisket flat has finished cooking and is now resting comfortably in the Rest EZ BBQ Blanket, doing what great briskets do best β taking a well-earned nap before slicing time.
Before it came off the smoker, the flat was looking incredible. The bark had set beautifully, the color was exactly what we were hoping for, and the smell alone was enough to make waiting even harder.
Meanwhile...
π₯ The point is still on the smoker.
After reaching the perfect stage of the cook, we cubed it up, seasoned it with a little extra love, glazed everything down, and sent it back out to the smoker to transform into brisket burnt ends.
The pictures posted with this update are from that stage of the process β right after cubing and glazing the point before it headed back out for its final trip through the smoke.
We've also got a mountain of brisket trimmings slowly rendering down into some liquid Texas gold. Nothing goes to waste around here.
At this point, the flat is resting, the burnt ends are soaking up that final layer of smoke and flavor, and we're getting very close to the best part of the entire cook...
The taste test. ππ₯
Stay tuned for the final results.

π₯©π₯ Brisket Experiment Update π₯π₯©
The prep work is done, the smoker is rolling, and the brisket experiment is officially underway ππ₯
This morning we loaded up:
π₯© The brisket flat
π₯ The brisket point (future burnt ends)
π§ A mountain of brisket trimmings
Everything was seasoned with Meat Church Holy Cow and is now settling in for a long, slow ride through the smoke.
The flat will be sliced up the traditional way, while the point is destined for a much sweeter fate β getting cubed up and transformed into brisket burnt ends later in the cook.
And let's not forget about all those trimmings. Nothing goes to waste around here. They're slowly rendering down into what BBQ folks affectionately call Texas Gold β rich, liquid brisket tallow that'll find its way into future cooks and help make good BBQ even better.
Now comes the hardest part of every smoke session...
β° Waiting.
Just sitting back, enjoying the smell of smoke rolling through the yard, and letting time do its thing.
We'll keep y'all updated as the cook progresses and hopefully have some beautiful bark and burnt ends to show off later today.

π₯©π₯ Weekend Brisket Experiment π₯π₯©
One of the things we enjoy most about BBQ is that thereβs always something new to learn, tweak, and experiment with. This weekend, weβre trying something a little different with a brisket.
Instead of smoking it whole, we separated the point from the flat and will be cooking them independently.
π₯© The flat will be smoked and sliced the traditional way.
π₯ The point is getting a special treatment β we're turning the entire thing into brisket burnt ends. More bark, more seasoning, more smoke, and hopefully some downright incredible bites of BBQ goodness.
Everything has been seasoned with Meat Church Holy Cow and is currently resting in the refrigerator, soaking up all that flavor before hitting the smoker first thing tomorrow morning.
We'll be sharing updates throughout the cook and, if all goes according to plan, we'll have plenty of pictures of the finished product this time before it mysteriously disappears π

π₯©π₯ Tomahawk Steak Recap π₯π₯©
Out of everything we had on the smoker this past Memorial Day weekendβ¦ the tomahawks absolutely stole the show ππ₯
Unfortunately, we got so caught up cooking and eating that we completely forgot to grab pictures of the ribs, Wagyu poor manβs burnt ends, honey buns, and Wagyu tri-tips before they disappeared π
β¦but we DID manage to capture the steaks π
We ran three tomahawks, each a little different:
π₯© One seasoned with Holy Gospel
π₯© One seasoned with Blanco
π₯© One seasoned with classic SPG (salt, pepper, garlic)
Each steak was reverse-seared to a perfect medium rare, then finished on the stove to build a beautiful crust. During the rest period, we topped them with a homemade compound butter made with fresh garlic and chives that melted right down into the meat π€π₯
The end result?
Juicy, tender, smoky, and packed with flavor from edge to edge.
Thank yβall again for all the support and Memorial Day orders. We appreciate every single one of yβall!
