If we HAVE to start talking about fall, I’m starting with apple pie matcha 🍎🍵

You already know I love grating fresh fruit into my matcha, so obviously I had to keep it going with apples for fall. The fresh apple with caramel + cinnamon sugar makes this taste like apple pie in iced matcha form and I’m officially adding it to the rotation.

I’ve been swapping drinkmilk50 into all of my matchas lately—it’s real dairy, lactose-free and works in everything I’d normally use milk for.

ORANGE CHICKEN & “BROCCOLI” — one of my favorite stir fry dishes to order, but made just slightly healthier without rice and with more veggies, but keeping the delicious crispy orange chicken in tact! 🍗

✨Ingredients✨
1 bag frozen orange chicken
1 tbsp sesame oil
1 thinly sliced red pepper
1 thinly sliced onion
3 garlic cloves
1 bag broccoli slaw
1/2-1 tbsp Umami seasoning
1-3 tbsps coconut aminos
1 tbsp sesame seeds
sliced green onion

✨Instructions✨
1. Cook the chicken according to package instructions.
2. While the chicken is cooking, heat the sesame oil in a medium sized skillet. Then add the red pepper and onion, and cook for 3-4 minutes or until they begin to soften.
3. Add the garlic and broccoli slaw. Cover and continue cooking for about 2 minutes or until the slaw just begins to soften.
4. Add the umami seasoning and coconut aminos and toss, continuing to cook for 2-3 more minutes - you want the flavors to infuse but not for the slaw to become mushy.
5. When the chicken is finished, heat the sauce in a large skillet or wok over medium-high heat, then add the chicken and sesame seeds and toss to coat. Continue cooking for 3-4 minutes, or until the sauce begins to caramelize.
6. Divide the broccoli mixture between bowls and top with the orange chicken, more sesame seeds, and green onion.

✨Ingredients✨
Salmon burgers:
1 lb salmon
Olive oil
salt and pepper
1 large shallot, diced
1 red bell pepper, seeded and
ribs removed, diced
1/2 cup thinly sliced green
onions
2 tbsps gochujang paste
1 tbsp mayonnaise
2 large eggs
1/2 cup panko bread crumbs
10 brioche buns, lightly toasted
1-2 packages seaweed snacks
mixed greens or microgreens

Gochujang aioli:
2/3 cup mayonnaise
2-3 tbsp gochujang paste, depending on
desired level of spice
1 tbsp rice vinegar
2 tsp toasted sesame oil
2 cloves garlic, grated
1/2 tsp honey
1/4 tsp kosher salt

✨Instructions✨
1. Preheat the oven to 400 F. Place the salmon on a
foil-lined baking sheet. Brush olive oil over the salmon and season with salt and pepper. Bake for 12 to 15 minutes, then tranfer the salmon (without skin) to a large bowl and shred with two forks.
2. Add the shallot, red pepper, green onions, gochujang paste, mayonnaise, eggs, panko bread crumbs, and salt and pepper to the salmon. Mix until everything is well combined.
3. Using a 1/2 cup measuring cup, form the salmon patties on a greased baking sheet and broil for 8-10 minutes, or until they begin to char on the edges.
4. While the salmon patties bake, prepare the gochujang aioli: In a small bowl, combine the mayonnaise, gochujang paste, vinegar, sesame oil, garlic, honey and salt and mix well.
5. Assemble the burgers with the aioli, seaweed snacks, mixed greens, and a salmon patty.

Maple Dijon Steelhead Trout is the easiest weeknight dinner you’ll ever make! 🐟 I used because it’s BAP certified sustainable and fresh never frozen. That’s a big difference you can really taste! 😋 You can order yours via the link in my bio!

✨ Ingredients ✨
1/4 cup butter
1 garlic clove, minced
1 tbsp maple syrup
1 tbsp light brown sugar
1 tbsp rice vinegar
1 tbsp Dijon mustard
1 tbsp soy sauce
4 Marine Harvest Steelhead Trout fillets
Fresh parsley, for garnish

✨ Instructions ✨
1. Melt the butter in a small saucepan over low heat. Then whisk in the garlic, maple syrup, sugar, rice vinegar, dijon mustard, and soy sauce. Once fully combined, remove it from the heat and set aside.
2. Preheat the air fryer to 400 degrees F.
3. Place the fish on a plate or baking sheet and brush a generous layer of sauce over top.
4. Then place the fish in the air fryer basket and air fry for 12-15 minutes or until the edges begin to char. Garnish with parsley and serve!

You don’t need a grill to make corn on the cob with the perfect char! 🌽 this air fryer corn recipe is quick, easy, and totally foolproof. You can serve it elote style like I did or with a side of melted butter.

Crispy carnitas meets crunchy tortillas for a mouthwatering tostada/pizza/whatever you wanna call it! 🍕 🌮

✨ Ingredients ✨
Tortillas (the almond flour ones are my fav)
Carnitas
Salsa verde
Orange juice
Cotija cheese
Pickled onions
Cilantro

✨ Instructions ✨
1. Spread a spoonful of salsa verde over each tortilla and bake them at 350F for 8-10 minutes or until they’re crispy.
2. Dice the carnitas and heat them in a large cast iron skillet on medium heat until they brown on the edges. Add the orange juice about 2 minutes before removing them from the heat.
3. Top the tortillas with the crispy carnitas, sour cream or mexican crema, pickled onions, cotija cheese, and cilantro.

Is it just me or does fall make you think of buffalo chicken more than pumpkin spice? 🍂 This crispy buffalo chicken salad is the perfect way to celebrate the season! It’s got all my favorite fall flavors, with a creamy blue cheese dressing, crispy buffalo chicken, and sweet butter lettuce. 🥗
