Queso Mama is delicious, bold flavored queso, high quality ingredients, gluten free and vegetarian. Then I realized this was a real call.
Leigh Oliver Smith Vickery, founder of Queso Mama, sought to fill a niche on store shelves. Her refrigerated queso dip is a “fun food” with a clean label and a flavor profile that was new to the market. Having confidence in her concept, Leigh took her queso dip to the Whole Foods Market headquarters. In 2009, Whole Foods was the first to recognize the potential of Leigh’s refrigerated queso dip and gave her a shot. Queso Mama was originally branded as “Leigh Olivers” and her first big break came in 2012 in the form a Dallas Cowboys foodservice request for its new stadium.
“Somebody high up in the organization had it at a party and said, ‘I want this in the new stadium.’ I was driving carpool for my middle-school son when I got the phone call from them,” Vickery says. “To be honest, I thought it was a friend pranking me, and I didn’t believe they were really the Dallas Cowboys at first. He explained how he found out about it and asked if we make it in foodservice. To be clear, I had no idea how to pack our product in the large sizes they needed, but I faked my way through the call, immediately called my friends at Chairmans and said, ‘Please tell me you can do this.’ And of course, they could and have for a decade or more.”
The brand was growing and needed a different look and name. One night at the dinner table Leigh’s son exclaimed, “Queso Mama” and from then on it had its new identity. Leigh was able to secure help from a top design firm to transform “Leigh Olivers” into Queso Mama. The new look captured the colorful essence that makes queso a “fun food”. It wasn’t long before the product was picked up by Costco and Target.

Beef & Mushroom Queso Mama Fries
16 oz French fries
1/2 lb ground beef
1/4 cup red onion, diced
1 cup mushrooms, sliced
8 oz. Queso Mama, any variety
Directions:
Cook French fries to the manufacturer directions.
While those are cooking, in a saute pan over medium heat, add ground beef and onion. Cook until beef is browned, separate beef while cooking.
Drain excess oil from the pan. Add mushrooms to the pan, stir and cook until they begin to brown.
Add Queso Mama and stir until the queso has melted and the mixture becomes bubbly.
Add French fries to a serving dish.
Pour beef and queso mixture over the fries and serve immediately.

Taco Rice with Queso
1 lb. Ground Beef
1 oz. pkg Taco Seasoning
1/2 cup Salsa or diced Tomatoes
10 oz. pkg Yellow Rice (sub 1-1/2 cups White Rice)
3 and 1/2 cups Water or Chicken Broth
Salt and pepper as desired
1 cup Queso Mama (available at Target, Costco, Sprouts and more)
Directions:
In a large skillet, cook ground beef on medium high heat until thoroughly cooked. Drain excess oil.
Add Taco Seasoning and stir.
Add salsa/tomatoes and rice and stir to incorporate.
Pour water into the pan, stir and bring to a boil.
Once the water boils, cover the pan, turn the heat to simmer and cook 20-25 minutes until the rice is tender and the water has been absorbed. Place in a serving dish or serve directly in the pan.
In a microwave safe bowl, heat Queso Mama for 60 seconds. Stir and spoon over the Taco Rice.

Queso Mama Tamale Pie
Makes 6 to 8 servings
1 1/2 pounds ground beef
1 small onion, chopped
1 jalapeno, chopped
1 (1 1/4-ounce) packet chili seasoning
1 (10-ounce) can rotel
1 tablespoon minced garlic
1 (15-ounce) can chili beans
1 (4-ounce) can green chiles
1 (8 1/4-ounce) can creamed corn
1/4 cup milk
1 egg
1 (8.5-ounce) box Jiffy cornbread mix
1 (12-ounce) container Queso Mama White Queso, warmed until pourable
Preheat oven to 375 degrees Fahrenheit. In a large oven-safe skillet over medium-high heat, brown beef for 8 to 10 minutes. Add onion, jalapeño and chili seasoning. Cook, stirring often, until onion is softened, about 4 minutes. Stir in rotel, garlic, and chili beans. Bring to a simmer and remove from heat.
In a medium bowl whisk together green chiles, corn, milk and egg. Whisk in cornbread mix. Pour Queso Mama over ground beef mixture. Then top with cornbread mix. Place in oven and bake 1 hour or until cornbread is cooked through.
