What’s better than cookies for breakfast?! Made these breakfast cookies last week and forgot to share but they were delicious and the perfect snack to grab on the go!
Breakfast Cookies
1/2 C oats
1 mashed banana
1/4 C peanut butter
1/2 tsp vanilla extract
3 tbs dried cherries (i used )
2 tbs honey
1 tbs coconut flakes
1 tbs flaxseed
Pinch of salt + flakey sea salt for topping!
Directions:
Set oven to 350 degrees. Mix all ingredients together, form into cookies using a cookie scoop, and bake on a parchment lined cookie sheet for 15 min. Allow to cool and store for 3-4 days!

Yesterday’s warm weather inspired me to make a mango salsa! And what better than recipe🙌🏻 below is her recipe, tweaked very slightly! It’s a good one, so save it for your warm weather festivities this summer!
Mango Salsa
1 mango, cubed
1 red bell pepper, cubed
1 jalapeño, finely diced
1/4 red onion, diced
1 cucumber, peeled and cubed
1/2 C cilantro, chopped
2 small limes, juiced
1/2 tsp cumin
1/2 tsp pink salt
Directions:
Combine all ingredients in a bowl and mix. Refrigerate for a couple of hours abs enjoy for up to 5 days in an airtight container! @ Beacon, New York

Sweet Potato Coconut Curry 🍜
I’ve recently discovered that i love curry and it’s super each to make which i like even more! Made this sweet potato one yesterday, let me know what you think!
Sweet Potato Curry
2 tbs avocado oil
2 cloves garlic
1/2 poblano pepper, diced
1 tbs fresh grated ginger
2 tbs red curry paste
1 sweet potato, chopped
4 large carrots, peeled and chopped
4 C chicken broth
1 bunch kale, de-stemmed
1 can unsweetened, full fat coconut milk
1/2 C Cilantro, chopped
Juice from 1 lime
Directions:
1. Add your oil to a medium pot or Dutch oven over medium-high heat. Add your garlic and pepper. Sauté for 5-8 minutes, or until browned.
2. Add in your curry paste and ginger. All go sauté for another few minutes.
3. Now it’s time to add your sweet potatoes, carrots, and chicken broth. Cool until sweet potato and carrot is softened.
4. Add your kale and coconut milk, remove from heat and let the kale cook in the hot soup.
5. Optional but it’s really great with cilantro and lime added at the end! Salt and pepper to taste!
This is great as is, served over rice, or w rice noodles mixed into it😋

signs of spring: 🐝 🌸🌱
i loved the snow this year, but we’re starting to see the grass now and i can’t hold my excitement! Dan and I have some big plans this spring and i can’t wait😊 i was sitting out in the sun today and this little man landed next to me! almost stung me for getting my camera too close😂 but it’s nice to see the bees starting to come out!

Warmer weather ahead calls for this fruity brussel sprout salad! Save it for when it hits 60 (aka NEXT WEEK🥳) and you want something refreshing! All you need are brussel sprouts, strawberries, grapes, an apple, raisins, and raw pepitas!
Today i made it without grapes but they go perfectly in this salad! My favorite are red grapes but you can use any that you like. For apples we usually use a honeycrisp, jazz, or pink lady but again, use whatever you like best!
Fruity Brussel Sprout Salad
- 1lb brussel sprouts, stemmed n shredded
- 1/2 large Apple, diced
- 10 strawberries, sliced
- about 1.5 C grapes, halved
- 1/2 cup raw pepitas
- 1/4 cup golden raisins
Dressing
- 1/4 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1/2 tbs maple syrup (more if you want to cut the tartness of the vinegar)

Slow Sunday morning started off w some French press ☕️ normally we make our coffee w the aero press, but when we have a little bit more time we like to use the French press. Bc we don’t use this everyday, i can never remember the measurements lol so this time i just wrote them right on it! Today we used our espresso beans from .coffee.beacon and it was really good. Extremely smooth w no bitter aftertaste💯
French Press Coffee (makes 2 cups)
- 7tbs coarsely ground coffee
- 3 cups water at 195 degrees
Pour your water over the ground coffee, stir it up and let sit for 8-10 minutes. Press and enjoy!

Pastrami grilled cheese w tomato soup😍 made these for lunch yesterday n really wishing i bought more pastrami to make them again today...they were SO good n perfect for a cozy winter lunch!
Grilled Cheese
- Sliced seeded rye
- sharp cheddar (this is the best cheddar)
- Pastrami
- Dijon mustard
butter up your pan n put both slices down. place the cheese slices on one piece of bread, top w pastrami, then dijon on the other slice. let brown slightly, then put the pieces together. turn heat to low, brown both sides n cover so cheese melts😋
Vegan Tomato Soup (made in my )
- 1 28oz can whole, peeled tomatoes
- 1/2 cup vegetable broth
- 1/2 sweet onion
- 1 clove garlic
- 1/4 tsp thyme, rosemary, oregano
- 1 tbs tomato paste
- salt + pepper to taste
- cream from a can of coconut milk (only scrape the top, leaving the liquid)
Add to your blender, n blend until smooth. If you have a vitamix, blend for 6-8 minutes, or until you see steam coming out. If you don’t have a vitamix, blend until smooth then transport to a pot n heat over medium low heat.
