Creamy slow cooker Tuscan chicken with juicy thighs, spinach, and parmesan. Ten minutes of prep in the morning. Dinner is ready when you walk back into the kitchen.
Three hours on high, or six hours on low. Either way of cooking works in our testing. We got the same result both times. The chicken pulled apart with a spoon and the sauce was creamy and perfect for spooning over noodles or rice.

We make this on repeat all grilling season. The marinade is like a cleaned-up Hawaiian BBQ sauce: dates instead of sugar, coconut aminos instead of soy, smoked paprika for smoky flavor.
Thighs or breasts both work. No grill? The cast iron pan or the oven work too.

Ground beef and broccoli stir fry. 25 minutes.
The classic uses sliced flank steak. Ground beef skips the slicing, marinating, and dredging, and the sauce coats every piece evenly. Sauce whisks together while the beef browns. Broccoli steams in the same pan.
Steam the broccoli to taste, not time. Some like it crunchy, some softer.

Forgot to thaw the chicken again? That used lead to a 20-minute scramble figuring out dinner.
Now it’s just the air fryer.
Frozen chicken breasts go in straight from the freezer, 25 to 40 minutes depending on size, brushed with sauce in the last few minutes so it doesn’t burn off.
Pull each one at 165°F, because the temp climbs fast after 130 and dry chicken is worse than late chicken.

These gluten free flourless peanut butter cookies are made in about 20 minutes with just one bowl!
INGREDIENTS
1 egg
1.5 cups sugar free peanut butter, (creamy or crunchy, whatever you prefer. you can also use another nut butter for strict paleo.)
1 cup coconut sugar
2 tsp vanilla extract
Sea salt, (for sprinkling on top)
Chopped peanuts, (optional garnish)
INSTRUCTIONS
1. Preheat oven to 350° Fahrenheit and line a cookie sheet with parchment paper.
2. In a medium mixing bowl, whisk egg.
3. Add the rest of the ingredients, except for the sea salt, and mix to combine.
4. Roll the dough out into 12 balls and place on lined cookie sheet.
5. Use a fork to make a # on each cookie and sprinkle with sea salt (and chopped peanuts if using) on top.
6. Bake for about 10 minutes. Remove and let cool. Enjoy!

1 lb small gold potatoes, quartered
4 cups chicken stock (divided)
1 cup coconut milk
2 carrots, diced
3 celery ribs, diced
1 onion, diced
4 cloves garlic, minced
2 cups mushrooms, sliced
1 tbsp ghee, (or sub avocado oil)
4 cups cooked chicken, (shredded or cubed)
1 cup frozen peas, thawed, (omit for Whole30)
1 tsp sea salt
1 tsp ground pepper
1 tsp Italian seasoning
1 tbsp fresh sage, or sub 1 tsp dried
1 tsp fresh thyme, or sub 1/2 tsp dried
