First cold night of the year and nobody wants a salad. Fall is when tinned fish earns its shelf space: smoked sardines mashed onto dark rye, codfish folded into buttery potatoes the Portuguese way, mackerel flaked over hot rice with a soft egg.
We’re sending the season’s pantry dinners by email. Warm recipes you can make from one tin, what to open alongside it, and notes from our family table in New England.
Get on the list at the link in bio. Then tell us: what’s the first thing you cook when it turns cold?

BELA is canning in Maine. On the docks with the fishermen who land the catch, tinning New England fish in New England.
The Tin Society is the small group who gets it first. Four drops of three tins, September through December, each one in your hands a full month before it reaches a single store. September’s drop is the first BELA tin ever canned in America.
