La Combe - 2026 (6.2% abv) Blend of sour beer fermented on Syrah, Cinsault, and Grenache pomace from the 2024 and 2025 harvests; lightly dry-hopped with Barbe Rouge
Cuvée Courson - 2026 (5% abv) Blend of sour beer fermented on Viognier and Vermentino pomace with freshly-brewed Saison Antoine
Cuvée Bourgeon - 2026 (6.5% abv) Blend of sour beer fermented on Terret Bourret, Viognier, Vermentino, and Carignan pomace; lightly dry-hopped with Sorachi Ace from Lot-et-Garonne

Fox Farm Weekend @ Tørst

The most recent batch of “Barmy” was such a mind-blowing, characterful brew we couldn’t help but hold a sixtel back in our cold room to spotlight the beer in a wider weekend brewery feature. Tis the era for an English-style ale Renaissance it seems, and we couldn’t be happier about it! Both “Barmy” and “Corky” are made from grain malted by Thomas Fawcett & Sons, an 8th-generation, 200-year old malting company in West Yorkshire, UK, as well as a blend of mostly UK-grown hops. See below for more information on those brews, as well as many other beers on draft* for this special weekend feature

Arietta - 2024 (7.2% abv) Spontaneously-fermented pale ale dry-hopped with NY-grown Cascade (ask about bottles of 2023 for a fun side-by-side!)
Avalonia - Red (5.6% abv) Barrel-aged and blended farmhouse-style ale conditioned on cherries and raspberries
Barmy (6.2% abv) Burton-style ale brewed with Thomas Fawcett & Sons Malt malt (Maris Otter and Halcyon base, plus Amber and Dark Crystal 1, plus a bit of Invert Sugar #2) and hopped with Fuggle and East Kent Golding
Copestone - 2024 (14.5% abv) Port and bourbon barrel-aged barleywine
Corky (4.7% abv) English-style golden ale brewed with Fawcett malt (Low-Colour Maris Otter and Golden Promise) and hopped with a blend of UK and Northeast US-grown hops (including a half pound per barrel dry hop)
The Cottage (5.2% abv) German-style helles lager
Rove (5% abv) Farmhouse-style pale ale dry-hopped with Nelson Sauvin, Azalea, and Motueka
Upcoast (4.8% abv) West coast-style pilsner brewed with Maine-grown, floor-malted barley from Blue Ox Malthouse and heirloom dent corn, and dry-hopped with American-grown Citra and Krush and New Zealand-grown Manilita
Virid (7.2% abv) IPA featuring Nelson Sauvin from Freestyle Hops, New Zealand

Celebrating 13 Years of Tørst

Amenable (4.2% abv) English-inspired bitter brewed with English malt, lightly-cooked invert sugar, and Challenger and Goldings hops; each can is dosed with nitrogen to emulate the creamy foam of a traditional Northern UK cask pour—we like it best from a stein! The flavors of this year’s Zwanze beers are as much of the Jura region of France as they are of Brussels and that’s thanks to Florian, Paul, and Vincent of
Four years ago these fellas started making vermouth the traditional way using grapes of the Jura (Pinot Noir, Poulsard, Chardonnay) as a base and more than 70 different plants (mostly sourced from the Jura, of course) to bolster the intrinsic profiles of the grapes themselves into four different vermouth expressions, greater than the sum of their parts. Cantillon’s Jean Van Roy was so very impressed by these elixirs and of course saw blending potential with spontaneously-fermented brews and voila! the next experiment in this lauded Zwanze lineage took form!
After many tastes & many chats, the Sullivan boys made two different elixirs meant to blend well with Lambic and Kriek, respectively:
“Artémis La Blanche” is an elixir made from gentian, coriander, rhubarb root, juniper, sage, angelica, wormwood, and many other herbs, blended with Cantillon Lambic
“Artémis La Rouge” is an elixir made from verbena, marjoram, rose, apple, curry plant, wormwood, and many other herbs, blended with Cantillon Kriek

LoLa Weekend @ Tørst (4/9 - 4/12)
We’re excited to welcome Laura and Mark of Lower Lake Brewery in Hamilton, New York, back to their old Greenpoint stomping grounds on Thursday, April 9th, to kick off a full weekend with their deliciously sessionable lagers & ales @ Tørst
It’s rare for such a young brewery to come out of the gate with a complete lineup of nuanced, characterful beers, especially when those beers are some of the most difficult styles to brew well. Laura and Mark have done exactly that but the whole truth is that it was neither easy nor quick: Mark’s been brewing since 2013–around the same time the couple met—and one of he and Laura’s core values is time: give the lagers time, give the brand time, give the community time. They make decisions slowly and carefully and boy, you can taste it
Come and taste for yourself and chat up Laura & Mark about their big pandemic-era move upstate, their old world lager inspirations, their appreciation for what good art can do for good beer, etc., wherever the path might lead
