Our cornbread is done! 😋 The recipe is down below. 👇🏻

Mom’s Cornbread

Ingredients:
2 cup self rising cornmeal mix
½ cup self rising flour
1 stick butter (melted)
¼ cup vegetable oil
2 egg (beaten)
1 - ¼ cup buttermilk
2-3 heaping tbsp bacon grease

Instructions: Preheat oven to 450 degrees. Place bacon grease in a 10” skillet and cook for 5 mins or until the grease is hot and bubbly. In a mixing bowl, combine cornmeal, flour, butter, oil and eggs. Mix well. Add buttermilk until desired consistency. (Mixture should be thinner than brownie batter.) Pour in hot skillet and bake for 20-25 mins or until golden brown.

Prep Time: 10 mins
Cook Time: 20-25 mins
Temp: 450 degrees

When you stop to get gas, use your rewards, end up getting it for $3.86, and only need to fill half the tank, and it still costs $175. 😳

I’m thankful for my little gas pushing RV tonight. ⛽️

If it took diesel, I’d have to park it for awhile. 🤣

We’ve had a chill, beautiful day in Nashville. We went and tried out a restaurant called, Monell's, which was incredible! 😁

My friend, Mark Fuller, has been telling me for years, to go try it out.

It’s one of my new favorites, and I’ll definitely be going back. 👏🏻

After that, we walked around Germantown, and toured the Tennessee Museum.

Then, we came back to the RV and napped, now we’re ending the evening, with a walk and a campfire. 🔥
